Muffins are perfect and delicious for a snack or breakfast, and they come in many different flavors. Today we’ll see a simple, delicious, and very light version: my egg-free, butter-free, milk-free water and cocoa muffins, with a soft chocolate center that will melt in your mouth. For cooking, we will use the air fryer, but you can use the oven as an alternative.
These water and cocoa muffins are very light, have a super soft texture like a cloud, are very delicious, and the inside will have a lovely surprise with the chocolate center that will win you over. As you will see from the recipe, they are very easy to make. You will need a few simple ingredients, and they are suitable for those with lactose intolerance or who are vegan because of the absence of eggs, milk, and derivatives.

Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup water
- 1/4 cup unsweetened cocoa powder
- 1/2 cup sugar
- 3 tbsps vegetable oil
- 1 packet baking powder
- 1 1/2 oz dark chocolate bar (with little sugar)
- to taste powdered sugar
- to taste butter (for greasing the molds)
- to taste flour (for greasing the molds)

Steps
Cut the chocolate bar into small cubes and set aside.
In a bowl, put water, oil, and sugar and mix with a hand whisk. Add the sifted cocoa and flour little by little, mixing well to blend them into the liquids. Finally, add a packet of baking powder. We should obtain a nice smooth and homogeneous mixture.
Meanwhile, preheat the air fryer for 4 minutes at 320°F. Take the muffin molds, grease and flour them. Fill the molds with the mixture, being careful not to exceed the volume (it will rise during baking and could overflow). Insert a cube of chocolate in the center of each muffin and cover it with the mixture using the back of a teaspoon.
Bake in the already hot air fryer at 320°F for 12-15 min. Check after 10 minutes and use a toothpick test to see if they are done.
Alternatively, you can bake them in the oven at 340°F for 20-25 minutes.
Let them cool and decorate with powdered sugar. Serve and… enjoy!
