Egg White Crepes with Yogurt and Cocoa Cream

The egg white crepes with yogurt cream are amazing: very easy to make, light, and protein-rich. They can be made two-toned, as in this case, simply by adding unsweetened cocoa to half of the batter, and we will fill them with a yogurt and cocoa cream that will win everyone over. The cream resembles Nutella, but it is made with Greek yogurt, unsweetened cocoa, and sweetener: a real treat, trust me.

These crepes are even more light because they use only egg whites, not whole eggs. Furthermore, with the yogurt cream filling, they are light and protein-rich, perfect for athletes or those on a diet. They have few calories and a low carbohydrate content (low carb).

The recipe for egg white crepes is extremely simple, once you try them, you’ll always make them this way. You can use egg whites or directly the carton sold at the supermarket.

Ingredients

  • 3 egg whites egg white (3 eggs without yolk)
  • 1/3 cup almond milk (or: soy, milk, oat, rice)
  • 1/2 cup flavored oat flour (or: all-purpose flour, rice flour, plain oat flour)
  • 1 tbsp unsweetened cocoa
  • to taste chopped pistachios (optional)
  • to taste powdered sugar (optional)
  • to taste extra virgin olive oil or butter (for the pan)
  • 5.3 oz Greek yogurt
  • 4 tsp unsweetened cocoa
  • to taste sweetener (or: sugar, erythritol)

Steps

  • In a bowl, pour the egg whites, milk, and flour, and mix well. Now divide the mixture into two containers: leave one as is, while in the other, add the sifted unsweetened cocoa powder and mix, this way you’ll get a cocoa batter.*
    *If you don’t want to make two-tone crepes, you can leave the mixture as is without dividing it or adding cocoa.

  • Meanwhile, prepare the cream in two minutes: pour the Greek yogurt into a bowl, add the unsweetened cocoa and sweetener (or sugar or erythritol) and mix well.

  • Cook the crepes: in a pan, heat a knob of butter or a drizzle of EVO oil; pour a ladle of batter and spread it over the entire surface quickly by swirling the pan. Cook for 2 minutes, flip it over, and continue cooking for 1-2 minutes. Repeat the process with all crepes, both simple and cocoa ones.

  • Now we just need to assemble the crepes: spread the cream along half of a crepe, fold it in half, then fill with more cream and fold again to form a fan. Do the same with the other crepes. Finally, decorate with powdered sugar and chopped pistachios. They are delicious, try them too!

Tips for you

✔ As an alternative to yogurt and cocoa cream, you can use any other spread, for example, protein, or jam (preferably without added sugars).

✔ You can make the crepes all one color: for example, if you prefer them with cocoa, add 10 g of cocoa to the batter without dividing it, or if you want them plain, you can leave them as is without adding anything.

✔ For the egg whites, you can use the carton from the supermarket or separate the eggs (in this case 3) without using the yolks.

✔ It’s normal for them to be very white, this is due to the lack of yolk. You can optionally add a pinch of turmeric.
