Ingredients

  • 1 roll puff pastry
  • 1 eggplant
  • 100 tomato sauce
  • to taste provola
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • Cut an eggplant into slices about half a cm (1/4 inch); transfer them to a colander and add a pinch of salt on each slice. Let the eggplants drain the excess liquid to remove the bitterness. After half an hour, wash and dry them well. Transfer them to the air fryer basket and cook them with a spritz of extra virgin olive oil at 356°F for about 10 minutes.

  • Meanwhile, prepare the sauce: in a small bowl mix the tomato sauce with a drizzle of extra virgin olive oil and a pinch of salt. Slice the provola (or another type of cheese).

  • Open a roll of puff pastry and spread the tomato sauce in the center; place the eggplants on top, more sauce and finally the provola. Fold the four sides towards the center, and seal the edges with a fork.

  • Cook the puff pastry in the air fryer at 338°F for 20 minutes, then flip it and cook the other side at 374°F for 5 minutes. Alternatively, you can bake it in a preheated oven at 374°F for about 35 minutes.

Tips for you

✔ It is necessary to cook the eggplant puff pastry directly in the basket of the air fryer without pans or parchment paper: in this way, they will cook thanks to the air passing 360 degrees from bottom to top, allowing for ideal air frying. Pans or parchment paper would be a hindrance as they would block the air circulating inside the air fryer.
