Hummus with Eggplants and Cherry Tomatoes in Air Fryer

In this recipe, we see how to season chickpea hummus with eggplants and cherry tomatoes in an air fryer, in a few simple steps. It’s super easy to prepare this flavor-packed and fresh dish. I used ready-made hummus, but you can make it at home by blending all the ingredients (found below in the ‘advice’ section). The eggplant and cherry tomatoes will cook in the air fryer in less than half an hour, without needing to add any oil during cooking.

Ingredients

  • 1 eggplant
  • 8.8 oz cherry tomatoes
  • 10.6 oz chickpea hummus
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • 1 small bunch parsley

Steps

  • Wash the eggplant and cherry tomatoes, then dry them well. Cut the cherry tomatoes in half and pierce the eggplant with a fork. Place the cherry tomatoes and eggplant in the air fryer basket and cook at 340°F for 20 minutes. Remove the cherry tomatoes and continue cooking the eggplant for another 5 minutes (a total of 25 minutes).
    You can also cook the vegetables in an oven at 355°F for about 45 minutes; in this case, I recommend adding a drizzle of oil.

  • Wait for them to cool for about half an hour. At this point, remove the eggplant skin and cut it into pieces. Transfer it to a bowl along with the cherry tomatoes and add a drizzle of extra virgin olive oil, a pinch of pepper, a pinch of salt, and some chopped parsley. Mix well.

    Now take the chickpea hummus and place it on a plate. Top it with the vegetable dressing, finishing with another drizzle of extra virgin olive oil and more parsley. Enjoy as is or chill in the fridge and serve cold. Bon appétit.

Advice for You

✔ Place the vegetables in the air fryer without adding oil or seasonings: they won’t be needed. If you choose to cook them in the oven, in addition to extending the cooking time and temperature, I recommend adding a drizzle of extra virgin olive oil.

✔ You can also use other vegetables, such as peppers/zucchini/onions/garlic, keeping in mind that cooking times may vary, so I recommend checking them and turning them if necessary. For the eggplant and cherry tomatoes, it’s not necessary to turn them during cooking.

✔ If you want to make hummus at home, here are the ingredients: 250 g cooked and drained chickpeas, juice of half a lemon, 3 tablespoons extra virgin olive oil, 1 clove of garlic, 1 teaspoon salt, 3 tablespoons tahini, 1 small bunch coriander: blend everything with a mixer and serve.
