Kissed Pizza in Air Fryer

The kissed pizza is a folded half-moon pizza topped raw. It’s one of the best pizzas in the world, and its cooking is really easy. To prevent the half-moon pizza from sticking during cooking, just put a drizzle of EVO oil before folding it, making it easy to open and then top after baking.

In this case, we see how to cook the kissed pizza directly in the air fryer, but alternatively, it can always be done in the home oven or, even better, in the pizza oven. I leave you all the cooking methods written so you can choose the one that suits your needs best. Obviously, there are differences between the cookings. If you bake the pizza in the home oven or air fryer, with lower temperatures than the pizza oven, the pizza will be slightly more biscuity and crunchy. In contrast, if you cook it in a pizza oven at a temperature of 752°F, the cooking will be much faster, the surface will have charring like Neapolitan pizza, and the dough will be much softer inside. This is because in an oven or air fryer, the temperatures are lower than those obtained in a gas or wood-fired oven, and the cooking minutes are consequently longer, even if only slightly. In any case, the pizza will be excellent whatever cooking method you decide to use.

Ingredients

  • 4 cups cups all-purpose flour (or pizza flour)
  • 1 1/4 cups cups water (room temperature)
  • 2 tbsps tbsps extra virgin olive oil
  • 2 tsps tsps salt
  • 1 tsp tsp dry yeast (or 2 1/2 tsps fresh)
  • to taste semolina
  • 4 burratas
  • 1 lb lbs cherry tomatoes
  • to taste pesto alla Genovese
  • to taste salt
  • to taste oregano
  • to taste extra virgin olive oil

Steps

  • In a bowl, pour the flour, the dry yeast, and add part of the water; start mixing with a spoon and continue to pour the water. Once all absorbed, add the EVO oil and the salt, then begin kneading with your hands first in the bowl and then on a work surface. Work the dough for a few minutes, then transfer it to a bowl with a drizzle of oil, cover with plastic wrap, and let it rise until doubled (about 3 hours).

    Take the dough, place it on the table, and divide it into 4 parts. Form round dough balls, transfer them back into a container, and let them rise for an hour.

  • Put some semolina on the work surface and stretch the dough balls with your hands, forming classic round pizzas. Pour a drizzle of EVO oil on half of the pizza and fold it into a half-moon: this way, the dough will not stick and will be easy to open once cooking is finished. Pour another drizzle of oil on the surface.

    COOKING IN AIR FRYER:
    Preheat the air fryer for 3 minutes at 392°F. Transfer the pizza directly into the basket and cook at 392°F for 8 minutes; open, flip the pizza, and cook for another 2 minutes.

    COOKING IN TRADITIONAL OVEN:
    Preheat the oven to reach a temperature of 482°F. Place the kissed pizza on a baking sheet lined with parchment paper and bake for about 15-20 minutes.

    COOKING IN PIZZA OVEN:
    Bring the oven to a temperature of about 752°F/788°F. You can use either the gas or wood-fired one. Transfer the pizza directly onto the stone and cook almost at the oven’s mouth, to avoid excessive charring from the flames. Turn the pizza using a small pizza peel, rotating it to cook evenly on all sides. It will take about 2 minutes in total.

  • I made some easy roasted tomatoes: cut the cherry tomatoes in half, transfer them to a baking sheet, and add a drizzle of EVO oil, salt, and oregano. Cook in air fryer at 356°F for about 15 minutes or in the oven for about 30/40 minutes.

  • Now you can top the kissed pizza. I spread the pesto alla Genovese, added the roasted tomatoes and a whole burrata. You can choose the topping you prefer. Close and enjoy. Bon appétit!

Tips for You

✔ The topping of the kissed pizza is one of the most varied things there is. I chose a simple but tasty one: pesto alla Genovese, roasted tomatoes, and burrata, but you can choose any flavor you like. For example: pistachio pesto, mortadella, stracciatella, and pistachio granules; or already cooked sauce and mozzarella; or even prosciutto crudo and stracciatella.

✔ For cooking in the pizza oven: if you don’t have a small peel, note this trick: bake and cook the first side for 15-20 seconds, then immediately insert the metal peel and take the pizza, bring it towards you, and with the help of your hand, rotate it manually 180 degrees, then bake again, it will take 3 seconds. Cook for another 15 seconds and rotate 180 degrees again. Finally, again, to perfectly cook all sides.
