Korean vegetable pancakes are very easy and delicious fritters, made with a simple batter of water and flour and cooked in a pan with seed oil. Today we will see how to cook them in an air fryer without using even a drop of oil, to make them even more light and healthy. Making these savory vegetable pancakes is really simple: we will need few and simple ingredients, and the cooking, as you will see, is very quick. The Korean vegetable pancakes are also egg-free and milk-free, so they are suitable for those who suffer from food intolerances or allergies to these ingredients. Ingredients
- 1 zucchini
- 2 carrots
- 1 red onion
- 3/4 cup all-purpose flour
- 1/2 cup cold water

Steps
To prepare the Korean vegetable pancakes, first wash a zucchini, remove the ends, cut it in half and then into strips. Peel the carrots, remove the ends, and cut them into strips as well. Finally, slice a red onion.
In a bowl, pour the water and gradually add the flour; add a pinch of salt and stir with a hand whisk until a smooth and homogeneous batter is obtained. Add the vegetables and mix them into the batter.
Line the basket of the air fryer with a sheet of parchment paper without holes; place a few spoonfuls of vegetables and compact them to create fritters. Cook them in the air fryer at 392 degrees Fahrenheit for 17 minutes, turning them over when there are 5 minutes left to brown the other side well. I cooked 4 at a time, just as if I were frying them in a pan.
Serve the Korean pancakes hot or cold: they are delicious both ways. You can also season them with a few drops of soy sauce or eat them as they are, like I did. Enjoy your meal.

✔ To cook the Korean vegetable pancakes in an air fryer it is necessary to use parchment paper without holes: this way the liquid mixture will not drip below and you will achieve a real fry.
✔ As you have seen, just one spray of olive oil is enough: they will be even lighter and have the same taste as those fried in a pan, but without the same fats and calories as those immersed in boiling oil.
