We will use thinly sliced potatoes and rosemary as a topping: I assure you that you will love them! You can bake them in the oven or in an air fryer: I’ll explain how to make them perfect even with this much faster cooking method.
The recipe for long mini pizzas with potatoes and rosemary is really simple: the dough is made with flour, water, extra virgin olive oil, and salt, and it’s extremely easy to make. You just need to wait until it doubles, divide it into 8 parts, and simply stretch them with your fingers (no rolling pin needed). I assure you that they are so easy and quick that you’ll want to make them at least once a month!
The uniqueness of these mini pizzas lies in their crispiness: the outside will be crunchy, and the inside very soft. The potatoes with the rosemary will give a unique flavor to these mini pizzas. You’ll love them too!

Ingredients
- 4 cups pizza flour or all-purpose flour
- 1 1/4 cups water at room temperature
- 2 tbsps extra virgin olive oil
- 2 tsps salt
- 1 1/4 tsps dry yeast (or 10 g fresh)
- 2 potatoes

Steps
In a bowl, pour the flour and add part of the water; start mixing with a spoon and continue to pour the water. Once all absorbed, add the extra virgin olive oil and the salt, then start kneading with your hands first inside the bowl and then on a work surface. Work the dough for a few minutes, then transfer it to a bowl, cover it with cling film and let it rise until doubled (depending on the temperature, it can take one hour or two hours).
Take the dough again, bring it to the floured table, and divide it into 8 parts. Form round buns, cover them with a towel, and let them rise for half an hour.
Meanwhile, peel two potatoes, wash and dry them, then cut them with a mandolin to obtain very thin slices. Dry them again one by one.
Stretch the buns with your fingertips, giving them a long shape. Top by laying the thin potato slices side by side, a few sprigs of rosemary, a pinch of salt, and a drizzle of extra virgin olive oil.
Transfer the long mini pizzas to the air fryer basket and cook at 375°F for 12 minutes. They will be perfect even on the bottom (even with just one resistance).
* Alternatively, bake them in a hot oven at 390°F for 20 minutes.Serve the long potato mini pizzas hot or cold: they will be spectacular. Enjoy!
Tips for you
✔ No need to flip the mini pizzas halfway through cooking: with this type of dough, the mini pizzas will cook perfectly both on top and bottom, even with just one resistance (as in almost all air fryers). I assure you they will be perfectly cooked on the bottom, even if not golden or charred like in the oven.
✔ You can cook them in an air fryer or oven by increasing the temperature and cooking times (you’ll find all the info above in the recipe).
✔ If you don’t have dry yeast, you can use fresh yeast; in this case, the conversion is very simple: 4 g dry yeast = 10 g fresh yeast. If you choose fresh yeast, just dissolve it in part of the water you’ll use for the recipe.
✔ The long potato and rosemary mini pizzas are perfect both hot and cold!
✔ For this recipe, it is necessary to cook the long potato and rosemary mini pizzas directly in the basket of the air fryer without trays or parchment paper: in this way, they will cook thanks to the air that passes 360 degrees from below to above, allowing for an ideal air fry. Trays or parchment paper in this case would be a hindrance as they would block the air circulating inside the air fryer and create condensation under the mini pizzas.
