The Mediterranean cod is an easy and tasty fish main course to prepare. It is quickly made, just put all the ingredients directly into the air fryer, or on a tray if using the oven, and it will be ready in less than half an hour.
This dish is full of flavor and requires few and simple ingredients that we almost always have at home. The Mediterranean cod is so easy that once you try the recipe, you’ll make it again and again.
It is perfect with a side of vegetables or potatoes, or after a first course, perhaps also based on fish or shellfish. You can choose to cook it in the air fryer or in the oven. Below you will find all the cooking instructions.

Ingredients
- 4 cod fillets
- 8 cherry tomatoes (cherry or grape)
- 1 handful of olives (taggiasca or other type)
- 1 lemon
- to taste oregano
- to taste salt
- to taste extra virgin olive oil

Steps
First, thaw the cod fillets by putting them in the refrigerator the night before.
Line the air fryer with a sheet of special parchment paper (I used these: see them here). Place the cod fillets inside and add the lemon slices, cherry tomatoes cut in half, olives, a sprinkle of oregano, salt, and a drizzle of EVOO.
Cook in the air fryer at 356°F for 18 minutes or in the oven at 392°F for 25-30 minutes.
Plate and enjoy. Bon appétit!
