Rice croquettes, also known as supplì, are crispy elongated meatballs with a melting and delicious filling. Here we see how to cook them in an air fryer in a very simple and quick way, with just a spray of extra virgin olive oil. Alternatively, they can be deep-fried in plenty of hot oil or baked in the oven by increasing the cooking minutes.
Rice croquettes are delicious, golden on the outside and very soft inside. We can use leftover rice, not necessarily with sauce (plain rice or saffron rice works perfectly), or you can cook it directly as I did. In this recipe, we’ll see how to make rice with sauce and then the croquettes. If you use leftover rice, go straight to the second part of the recipe.

Ingredients
- 7 oz Arborio or Carnaroli rice
- 1 3/4 cups tomato sauce
- Half onion
- 1 dash extra virgin olive oil
- 1 3/4 cups hot water
- to taste salt
- 1 pat butter
- 2 tablespoons grated Parmesan cheese
- 1 egg
- 3 1/2 oz melting cheese
- to taste salt
- to taste breadcrumbs
- to taste extra virgin olive oil (a spray)

Steps
First, let’s prepare the sauce. In a pot, pour a dash of extra virgin olive oil, add half a onion finely chopped and let it brown. Add the tomato sauce and stir. Meanwhile, heat some water in a saucepan. Add the rice and pour in the hot water little by little. Every time it dries up, add more. If necessary, heat more water.
Salt to taste, turn off the heat, and mix in a pat of butter and the grated Parmesan cheese, continuing to stir to combine the rice well. Once ready, let it cool completely and then transfer it to the refrigerator for a few hours. You can also use leftover rice kept in the fridge.
To make the rice croquettes, prepare the necessary items. Cut the melting cheese into small pieces. If using mozzarella, pat it dry well. In a bowl, pour the breadcrumbs.
Take the rice from the fridge and add a beaten egg, then mix well. Take a generous spoonful of rice and shape it into an elongated ball with your hands; put the cheese inside and close it with more rice, forming croquettes. Roll them in breadcrumbs, making sure it sticks well on all sides.
Preheat the air fryer for 3 minutes at 392°F. Transfer the croquettes to the air fryer basket, add a spray of extra virgin olive oil on all sides, and cook them at 392°F for about 15-20 minutes, turning them halfway through.
Alternatively, you can fry them in plenty of oil for a few minutes, or in a hot oven at 374°F for about 35-40 minutes.
Serve hot and melting. Enjoy your meal.
Tips for You
✔ It is necessary to cook the rice croquettes directly in the basket of the air fryer without trays or baking paper: this way they will cook thanks to the air circulating 360 degrees from bottom to top, allowing for ideal air frying. Trays or baking paper would be an impediment as they would block the air circulation inside the air fryer.
✔ The spray oil I used is available for purchase in supermarkets. I recommend one of these as their spray is truly misting and controlled, in addition to being excellent. You can find some by clicking here. Alternatively, you can buy a spray bottle that you can fill yourself with the oil of your choice. I leave you the link to a great nebulizer here.
