The brie in crust is one of the most delicious and particularly easy dishes to make. For this recipe, you’ll need very few ingredients: puff pastry, mini brie, an egg, and parsley! You can cook the mini brie in crust in an air fryer or in the oven. The result will be a true comfort: inside some creamy melted cheese and outside a crispy crust that encloses this delight. To accompany this dish, we will make some super simple bread crostini, even old bread is fine.
Alternatively, you can use camembert or directly some tomini instead of brie. Just follow the same procedure and the same degrees and cooking times (more related to the puff pastry). This recipe is so delicious and easy to make that once you try it, you’ll want to make it again and again!

Ingredients
- 2 mini brie (5.3 oz each)
- 1 roll round puff pastry
- 1 egg
- to taste parsley
- 4 slices rustic bread
- to taste extra virgin olive oil
- to taste salt

Steps
Place the mini brie on the sides of the pastry. Make horizontal and vertical cuts on the surface of the brie with a knife. Divide the pastry in half and create rectangles with the brie in the center. Set aside the pastry edges for later. Wrap the mini brie by folding the pastry over on all 4 sides.
With the leftover pastry, cut strips about 1 inch wide and add them to the brie to seal the top; place 3 in one direction and 2 in the other (or as you see fit). Make sure to seal them well at all points, leaving no part uncovered.
Brush the surface with a beaten egg and cook them in the air fryer at 340°F for 20 minutes; turn them halfway through and continue cooking.
If by mistake a hole is left uncovered on the surface, once flipped, the melted cheese would completely come out ending up under the air fryer rack, so it’s necessary to make sure it’s well sealed with the pastry before cooking.Alternatively, you can bake the mini brie in a convection oven preheated to 375°F for 30 minutes.
Serve them with some bread crostini, to make them simply cut the bread into the shape you prefer (I cut mine into sticks), transfer them to the air fryer, add a drizzle of oil and a pinch of salt, and cook them at 390°F for about 6 minutes.
Take the brie from the air fryer, place them on a plate, and garnish with freshly chopped parsley. Open the crust and enjoy the melted cheese with the warm crostini.
Tips for You
✔ You can use camembert or traditional tomini instead of brie. Just follow the same instructions given in the recipe.
✔ For the crostini, you can also use old bread or rustic bread. Alternatively, sliced bread is also fine.
✔ Make sure to close and seal the brie well with the pastry without leaving any part uncovered: the cheese will melt at high temperatures, so even if there’s just a small hole, when flipped halfway through cooking the cheese would completely come out.
