The no-bake persimmon and cocoa cake is so simple to make that it is prepared in just 5 minutes. The texture is similar to a pudding, and it is literally made with only two ingredients: persimmons and cocoa. No thickener is needed, making it one of the easiest and quickest cakes. Additionally, it’s a sugar-free cake/pudding. Once prepared, just leave it in the refrigerator for a few hours and it will be ready.
It’s also perfect for children: even those who don’t like eating fruit will enjoy it since this cake is almost entirely made from persimmons. It might also be called a “fruit cake”, but with a chocolatey taste that everyone will love.

- 3 persimmons
- 3 tablespoons unsweetened cocoa powder

Steps
Take the persimmons, preferably ripe, remove the skin (you can use it if very thin) and the stalk, and put them in a bowl. Add the unsweetened cocoa powder. At this point, just blend everything with an immersion blender for a few minutes until you get a smooth and velvety mixture.
Transfer the mixture into a mold and put it in the refrigerator for a few hours, 2-3 hours will be enough to solidify.
Turn the mold over and, if desired, garnish the surface with another sprinkle of unsweetened cocoa. Cut into slices and serve. To make them even more special, I’ve added some peanut butter. Enjoy your meal!
Tips for You
✔ I used a 20 cm mold, but you can easily use smaller molds and make more portions, or another idea is to use a glass. Since it’s like a pudding, you can use almost any shape.
