Pasta with Eggplant Cream, Cherry Tomatoes, and Burrata

The pasta with eggplant cream, cherry tomatoes, and burrata is one of those dishes that will make you dream and is always loved by everyone. It is made with only 3 ingredients and is incredibly easy. It is seasoned directly in a bowl, without having to sauté it, making it even more quick and simple. Additionally, this way you also mess up less in the kitchen! It is perfect even as cold pasta, ideal for hot days or an outdoor lunch or dinner.
The eggplants and cherry tomatoes can be cooked in an air fryer to make everything even quicker, or in the oven by increasing the degrees and time. Below you will find all the instructions for both cooking methods. It is so creamy and delicious that you’ll make it over and over again!

Ingredients

  • 7 oz pasta
  • 3 oz cherry tomatoes
  • 1 eggplant
  • 2 burrata
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste oregano

Steps

  • Wash the eggplant and cherry tomatoes. Cut the eggplant into cubes and the cherry tomatoes in half.

    AIR FRYER COOKING:
    Place a parchment paper tray in the air fryer basket. Transfer the eggplants and tomatoes inside, separating them, and season with salt, a grind of pepper, oregano, and a drizzle of oil. Cook at 375°F for 15 minutes, stirring them halfway through cooking.

    OVEN COOKING:
    Place eggplants and cherry tomatoes on a baking sheet, season with salt, pepper, oregano, and a drizzle of oil. Bake in a preheated oven at 400°F for about 25-30 minutes.

    Meanwhile, also cook the pasta in salted boiling water.

  • Once ready, transfer almost all the eggplants and cherry tomatoes into a tall container, keeping some aside for decoration; add a burrata and a drizzle of oil, and blend with an immersion blender for a few minutes until you get a smooth cream.
    Drain the pasta and put it in a bowl. Combine the cream and a few drops of cooking water until everything is even creamier: trust me, cooking water is sacred in the kitchen, so never throw it away before seasoning the pasta!

  • Plate and decorate with the eggplants and cherry tomatoes set aside, add some dollops of burrata or directly some stracciatella, finish with a drizzle of oil and a grind of pepper and, if you want, some basil leaves that always go well. Enjoy your meal!

Tips for you

✔ Instead of burrata, you can use: ricotta, stracciatella, spreadable cheese, or robiola.
