Pasta with Feta and Cherry Tomatoes | Air Fryer

Pasta with feta and cherry tomatoes is one of the most delicious and creamy dishes I have ever tasted. Making it is really easy, with just a few simple steps needed to achieve a delightful pasta that everyone will enjoy. Cooking in the air fryer makes it even faster, but if you don’t have one, you can also bake the sauce in the oven (all the cooking details are below).
I used lactose-free feta, but regular feta works just fine.
For this recipe, I chose a protein pasta, tasty and low in carbs, specifically Macchebuoni fit, which you can find on Amazon here: link. Alternatively, you can use the short pasta you prefer.
This recipe has been circulating online for a while (recipe seen on @cookist) and I finally decided to replicate it myself, after many requests from my Instagram community, in my air fryer version.

Ingredients

  • 1 cup cherry tomatoes
  • 1 feta (lactose-free)
  • to taste extra virgin olive oil
  • to taste oregano
  • to taste salt
  • 6.35 oz rigatoni
  • to taste fresh basil

A drawer air fryer is also fine, using a tray the right size for the basket.

Steps

  • • In a tray suitable for your air fryer (I used this tray: link of the right size for the oven fryer) we place the cherry tomatoes and season them with a drizzle of oil, a pinch of salt, and oregano. In the center, leave an empty space and place the feta (I used lactose-free) and pour a drizzle of oil and oregano on top.

    • Place the tray inside the basket and cook in the air fryer. If using an air fryer oven, place the tray in the middle section. Cook at 375°F for about 20-25 minutes. The tomatoes should be soft enough to be mashed.

    • Meanwhile, prepare the pasta. I used rigatoni. Boil it in salted water.

    • Once the sauce is ready, remove it from the fryer and mash the cherry tomatoes and feta with a spoon, mixing everything to create a cream. Add freshly chopped basil, and mix again.

    • Drain the pasta, pour it into the tray and mix. Serve and…enjoy your meal!

  • • You can bake the feta and cherry tomatoes in the oven at 425°F for about 35 minutes.

Tips for You

✔ The tomatoes should be soft enough to be mashed together with the feta to create a cream.

✔ I used a glass tray measuring 8.66×5.12 inches, suitable for my oven fryer. You can find the tray here: link.

✔ As pasta, I used protein rigatoni by Macchebuoni fit, which you can find here: link, as it has fewer carbs, plenty of fiber, and protein. Alternatively, any other short pasta is fine.

✔ If you have a drawer air fryer, I recommend a tray that fits your basket. For example, if your air fryer basket measures 8.66×8.66 inches, this tray is suitable: link (measures 7.87×7.87 inches).
