Want to try something really indulgent? Then here is the pistachio and mortadella lasagna, with gooey mozzarella, cooked in an air fryer. I’ve never eaten a dish so good. Beware, because it’s truly addictive, bite after bite!
The pistachio and mortadella lasagna is gooey, super soft, super creamy, and melts in your mouth. And on top, thanks to the pistachio crumbs, they even have a bit of crunch.
But do you know what’s the nice thing about this flavorful dish? It’s super easy to make and quick to cook, thanks to the air fryer.
So, let’s put on our apron and…get cooking!

Ingredients
- 3.5 oz mortadella with pistachios
- 5 sheets spinach lasagna (or regular egg lasagna)
- 2 cups béchamel sauce
- 2.6 oz pistachio pesto
- 7 oz mozzarella or provola
- as needed grated parmesan
- as needed pistachio crumbs
- 2 cups milk
- 1.8 oz all-purpose flour (or whole wheat)
- 1.6 oz sunflower seed oil
- as needed nutmeg
- as needed salt

Steps
If you’re making the béchamel sauce at home: in a saucepan, heat the milk until almost boiling, then turn off the heat. In another tall-sided saucepan, heat the seed oil on low for a minute; sprinkle in the flour while stirring quickly with a hand whisk. If you find the consistency becoming too thick, don’t add more flour; if it’s still too liquid, add a few more grams of flour. Keep stirring and pour in the hot milk. Salt to taste and add a dash of nutmeg; turn off the heat once the right consistency is achieved.
Add the pistachio pesto to the béchamel sauce and mix well to make it homogeneous.
Prepare a baking dish the size of our basket. I used a 20×20 cm (8×8 inches) dish. Arrange all the ingredients nearby: sliced mozzarella, grated parmesan, béchamel with pistachio, green lasagna sheets, and mortadella.
On the base of the dish place a ladle of béchamel with pistachio and spread it with a spoon. Place a lasagna sheet on top, then the béchamel again, a slice of mortadella, 4 slices of mozzarella, and then a sprinkle of parmesan. Repeat the layers for a total of 5. On the last layer, only add the béchamel, parmesan, and pistachio crumbs.
After preheating the air fryer to 356°F (180°C) for 2 minutes, cover the lasagna dish with a sheet of parchment paper and then seal with aluminum foil to ensure the inside cooks well.
Place the dish directly into the air fryer basket. Cook at 356°F (180°C) for 18 minutes. You can also bake it in the oven at 356°F for about 25-30 minutes. When 4 minutes are left, remove the foil and continue. This will create a delicious crust.
Remove it from the fryer and finish with a generous sprinkle of pistachio crumbs on top.
The indulgence of this dish is truly indescribable, I can only tell you it’s a must-try! With these amounts, you get 4 servings, but you can double them and cook two trays one after the other. Trust me, one tray won’t be enough because you’ll need to have seconds, then thirds… and so on!
Tips for You
✔ To cook the pistachio and mortadella lasagna, I used a non-stick baking dish measuring 8×8 inches (20x20cm). If you don’t have one, you can find it on Amazon by clicking here.
✔ Use aluminum foil for cooking: this will allow the lasagna to cook well inside. Remove it only when 4 minutes are left, so it won’t burn and will still be creamy enough to top with pistachio crumbs. Place a parchment paper sheet between the lasagna and the foil to be safer.
✔ For a lighter version, you can skip the mozzarella. It will avoid the gooey effect but will still be creamy.
✔ The pistachio and mortadella lasagna can be stored in the refrigerator for up to 5 days, or you can freeze them. If you don’t have time to cook them, you can freeze and cook them later. In this case, I recommend leaving them out of the freezer for at least 2 hours, then proceed with cooking as indicated above, adding a few more minutes.
