Pizzaiola Bread Sofficini in Air Fryer

We all love Sofficini, and this recipe is even more easy and quick, and they will be on the table in 10 minutes. To make the Sofficini, we will use simple sandwich bread, thus avoiding the need to prepare the classic dough ourselves. We will cook them in an air fryer for an even quicker cook: just 8 minutes! Alternatively, they can be cooked in a pan with a little oil or in an oven, doubling the cooking time compared to the air fryer.

These Sofficini are delicious, with a super crispy coating on the outside and a soft and melty center. One leads to another! Everyone will love them, both adults and children. To make them we will need a few simple ingredients.

Ingredients

  • 6 slices sandwich bread
  • 150 g tomato sauce
  • to taste salt
  • to taste extra virgin olive oil
  • 100 g melty cheese or mozzarella
  • 1 egg
  • to taste breadcrumbs
  • to taste cornflakes (unsweetened)

Steps

  • First, let’s prepare the sauce. In a small bowl, mix together the tomato sauce, a splash of extra virgin olive oil, and a pinch of salt. Separately, dice the cheese or well-drained mozzarella. Take the sandwich bread and slightly flatten it with a rolling pin.

  • Using a pastry cutter or a bowl, cut it into a circle. Fill one half with a teaspoon of sauce and a few cubes of cheese, then close the other half to create a half-moon shape. Seal the edges well by pinching them with your fingertips.

  • In a plate, beat an egg; in another, place the breadcrumbs with a pinch of salt and add the cornflakes, crushing them with your hands. You can also use breadcrumbs only.

    Pass the sofficini first in the beaten egg and then in the breading, ensuring it adheres well to all the edges.

  • Transfer the sofficini to the air fryer basket and spray them with extra virgin olive oil spray on both sides. Alternatively, you can brush the oil on the surfaces or drizzle some over.

    Cook in the air fryer at 392°F for 8 minutes, flipping them halfway through.

    Alternative cooking methods:
    – Cook the sofficini in a pan with a splash of extra virgin olive oil until golden, flipping to cook both sides.
    – In a preheated oven, cook the sofficini with a splash of extra virgin olive oil at 392°F for about 20 minutes.

    Serve hot. Enjoy your meal.

Tips for you

✔ It is necessary to cook the Sofficini directly in the basket of the air fryer without trays or parchment paper: this way, they will cook thanks to the air that circulates 360 degrees from below to above, allowing for ideal air frying. Trays or parchment paper in this case would be an impediment as they would block the air circulating inside the air fryer.

✔ The oil sprayer I used is available for purchase at supermarkets. I recommend one of these because their spray is really misting and controlled, besides being really great. You can find some by clicking here. Alternatively, you can buy a spray bottle that you can fill yourself with the oil you prefer. I’ll leave the link to an excellent sprayer here.

✔ I recommend using the BBQ mesh to be placed directly in the non-stick basket of your air fryer: the mesh protects the non-stick of the basket (which will remain as new) and allows the food to cook evenly, allowing the air to circulate 360 degrees. You can find it on Amazon by clicking here.
