Don’t know what to cook for dinner? Let me save you with this delicious recipe for super soft potato and zucchini patties in the air fryer! Once you start with one, you won’t be able to stop! These patties are super soft, with a cheesy center and a super crunchy exterior. A real treat for the palate! They are also easy and quick to make.

Ingredients
- 14 oz yellow potatoes
- 1 zucchini
- 3.5 oz mozzarella or melted cheese
- 2 eggs
- 2 tbsps breadcrumbs (more for breading)
- 1 tbsp potato starch
- to taste salt

Steps
• First, wash and peel the potatoes. Cut them into chunks and boil them until soft.
• Once cooked, let them cool down and mash them with a fork. Aim to get creamy potatoes as if you were making a puree.
• Grate the zucchini, squeezing out excess water, and mix it with the potatoes. Then add eggs, salt, potato starch, and breadcrumbs. Mix everything well.
• Meanwhile, preheat the air fryer for 4 minutes at 375 degrees Fahrenheit.
• Cut the mozzarella or chosen cheese into cubes. In a bowl, add breadcrumbs and a pinch of salt.
• Form a patty by taking some mixture with your hand, shape it into a circle, and coat it with breadcrumbs. Press the center with a finger to create an indent and place a cheese cube inside, then close the patty and coat again with breadcrumbs.
• Repeat the process to form all the patties.
• Lightly oil the air fryer basket, place the patties inside, drizzle with a little oil or spray, and cook at 375 degrees Fahrenheit for 18 minutes. Flip the patties after 15 minutes to brown all sides evenly.
• Serve the hot potato and zucchini patties, optionally accompanied by a light sauce (such as yogurt).
Tips and Variations
✔ As an alternative to potato starch, you can use corn starch or all-purpose flour.
✔ You can use any cheese you prefer: mozzarella works perfectly, but any type of melty cheese is great.
✔ You can store them in the fridge cooked, for up to 3 days, or in the freezer in an airtight container for up to 1 month.
✔ For this recipe, it’s necessary to cook the patties directly in the air fryer basket without trays or parchment paper: this way they will cook thanks to the air that passes 360 degrees from bottom to top, allowing for ideal air frying. Trays or parchment paper would be an impediment as they would block the circulating air inside the fryer.
✔ The spray oil I used is available in supermarkets. I recommend one of these because their spray is really nebulizing and controlled, besides being really great. You can find some by clicking here. Alternatively, you can buy the spray bottle that you can fill yourself with your preferred oil. Here’s a link to a great sprayer here.
✔ I recommend using the BBQ mesh to insert directly into the non-stick basket of your air fryer: the mesh protects the non-stick coating of the basket (which will remain like new) and allows the food to cook evenly, allowing air to pass 360 degrees. You can find it on Amazon by clicking here.
