Potato croquette and sausage skewers in the air fryer are a real treat that wins everyone over: kids and adults will go crazy for them! Crispy on the outside and soft on the inside, the potato croquettes combine with the sausage in a perfect mix of flavor and simplicity. This recipe is complete, as it combines protein and carbs on a single skewer, and at the same time it is easy and quick to prepare.
A big advantage? Cooking in the air fryer makes everything faster and lighter, keeping the skewers crispy and juicy. If you prefer, you can also bake them in the oven: slightly increasing the temperature and cooking time will give you the same delicious result. Both cooking methods are shown below.

Ingredients
- 12 oz potatoes (weighed raw (about 2 1/3 cups))
- 13 oz sausage
- 9 tbsp potato starch
- 2 eggs
- 1 tsp salt
- 1 tbsp smoked paprika
- as needed breadcrumbs

Steps
To prepare our skewers, start by boiling the potatoes in hot water until very tender, then mash them in a bowl with a potato ricer or masher until smooth. Add the potato starch, the salt and a sprinkle of paprika, mixing well until you have a homogeneous, moldable mixture.
With slightly oiled hands take a spoonful of the mixture, first form a ball and then shape it into a classic croquette. Continue until all the mixture is used. Coat each croquette first in beaten eggs and then in breadcrumbs.
Cut the sausage into pieces and assemble wooden skewers alternating croquettes and sausage, three of each, until the skewer is complete.
Spray a light drizzle of oil on the skewers and place them in the air fryer basket, cooking at 374 °F for 15 minutes, turning halfway through to ensure even browning.
If you prefer to bake them in the oven, arrange them on a baking sheet lined with parchment paper, spray with oil and bake at 392 °F for about 25 minutes, turning halfway through, until golden and crispy.
This way you’ll get tasty skewers, crispy on the outside and soft inside, ready to enjoy in no time. You can serve them as is or with a sauce of your choice — I used mustard, for example. Enjoy!
Vale’s Tips
Substitutions: you can use sweet potatoes instead of regular ones, flavored breadcrumbs for an extra touch, or gluten-free breadcrumbs for the gluten-free version. The sausage can be replaced with hot dogs, chicken bites or tofu for a vegetarian variation.
Storage: cooked skewers keep in the refrigerator for 1-2 days in an airtight container. To recover crispiness, reheat them for a few minutes in the air fryer or oven. They can also be frozen: place them on a tray separated, freeze, then transfer to a freezer bag. Cooking from frozen will require a few extra minutes.
Vale’s trick: to make them even more golden and crunchy without adding too much oil, spray a little cooking spray only halfway through cooking.
