Quick Stuffed Calzone with Salmon, Mozzarella, and Pistachio

The quick stuffed calzone with smoked salmon, mozzarella, and pistachio pesto is a simple and easy-to-make recipe, perfect for a tasty dinner, a gathering with friends, or even as a last-minute meal idea. In fact, it’s no-knead and can be prepared in less than 5 minutes. The combination of the intense flavor of the salmon, the creaminess of the mozzarella, and the aromatic note of the pistachio pesto makes this calzone irresistible from the first bite. To make the quick stuffed calzone recipe, you’ll need only 4 ingredients.
It can be easily prepared in an air fryer for a quicker and lighter cooking option, or in a traditional oven, with slightly increased temperature and time. Both versions are described in the procedure below, so you can choose the one you prefer based on the time available or the equipment you have at home.

Ingredients

  • 1 roll focaccia dough
  • 7 oz smoked salmon
  • 2 mozzarella balls
  • to taste pistachio pesto

Steps

  • Unroll the focaccia dough directly onto its parchment paper. Spread the pistachio pesto over half the surface, leaving a border of about 0.5 inches free. Lay the well-drained mozzarella slices over the pesto, distributing them evenly.
    Add a layer of smoked salmon, trying to cover the entire surface with slices. Make a second layer, alternating mozzarella and salmon again.

  • Fold the focaccia over itself with the help of parchment paper, sealing the edges well by pinching them with your fingers or with the tines of a fork.

    Place the calzone in the air fryer basket and cook at 356°F for 20 minutes, gently flipping it when about 8 minutes remain until cooking is complete. Alternatively, you can bake it in a preheated static oven at 374°F for about 35 minutes, until fully golden.

    Let cool for a few minutes before cutting and serving.

Tips for You

✔ For an even creamier result, you can replace mozzarella with stracciatella or a mix of mozzarella and ricotta.

✔ If you want a milder taste, you can use steamed or lightly smoked salmon, or replace it with cooked ham or sliced turkey.

✔ You can prepare the calzone in advance and heat it at the last minute: it will be as melty as if it were freshly made.

✔ If you don’t have pistachio pesto, you can also use a classic basil pesto or a walnut cream.

✔ Remember to dry the mozzarella with kitchen paper to prevent it from releasing too much water during cooking.
