They are an alternative to the sweet version, perfect instead as a snack or brunch. Tarte tatins are upside-down tarts, in fact, they are made the opposite way compared to any other preparation. So we will start by placing the seasoning at the bottom, then the cherry tomatoes, and finally, we will place the puff pastry on top; once ready, in fact, you will need to flip them.

Let’s see how to make these savory mini tarte tatins with yellow and red cherry tomatoes, the shape reminiscent of flowers thanks to the color alternation; if you like, once ready, you can also add Genoese pesto to make them even more appetizing and special. This appetizer will conquer everyone at the table: as you will see, making them will be extremely simple. We will need few ingredients and cooking in the air fryer will make everything even faster. Ingredients

  • 14 oz red and yellow cherry tomatoes
  • 1 sheet rectangular puff pastry
  • to taste balsamic vinegar
  • to taste honey
  • to taste dried oregano
  • to taste salt
  • 1 egg
  • to taste Genoese pesto (optional)

Steps

  • First, cut the cherry tomatoes in half; I used yellow cherry tomatoes for the petals and red ones for the flower’s center, but you can also use just one color or mix them as you like.

    Line the basket of the air fryer with a parchment paper cut to the same size. At this point, form 4 circles of about 3 inches with the balsamic vinegar (2 at the top and 2 at the bottom, so you can cook 4 tarte tatins together in the air fryer), do the same with the honey, drizzling it, and then with olive oil. Finish with a sprinkle of oregano and a pinch of salt.

  • Now place the cherry tomatoes with the cut side down on the parchment: start with the central red one and then place the yellow cherry tomatoes around to form the petals. Repeat the same for all 4 tarte tatins.*

    * If you use the oven, you can place more tarte tatins together, not just 4.

    Take the puff pastry and cut out discs of about 4 inches with a cookie cutter or a cup.

  • Cover the cherry tomatoes with the puff pastry, creating a dome. Prick the pastry with a fork and brush the surface with a beaten egg.

    Cook the tarte tatins in the air fryer at 340°F for about 15 minutes.

    You can also bake them in the oven at 375°F for about 30 minutes.

    Once ready, wait for about half an hour, then flip them. Use a spatula if necessary to remove them from the parchment. You can serve them with Genoese pesto: it will make them even more special and delicious. And here are the savory tarte tatins with cherry tomatoes ready.
