Spinach Chicken Patties in Air Fryer

Homemade spinach chicken patties are very easy to make; they require few ingredients and are very delicious. In this recipe, we see how to cook them in an air fryer for a lighter and much faster cooking method, but alternatively, they can be cooked in the oven or in a pan (below you will find all the cooking instructions).

To make the spinach chicken patties, we will need chicken, spinach, and a few other ingredients that we always have at home. We can also make them in a vegan version: in this case, I have left the alternative below the recipe in the “tips for you” section.

The spinach chicken patties in the air fryer recipe is prepared in fifteen minutes and is extremely easy to make. Once you try them like this, you’ll always make them at home!

Ingredients

  • 14 oz chicken
  • 7 oz boiled and squeezed spinach (weighed raw)
  • 1 tbsp grated Parmesan cheese
  • 1 tbsp breadcrumbs (or 2 if very soft)
  • to taste salt
  • to taste pepper
  • 2 eggs
  • to taste all-purpose flour (or semolina, other flour)
  • to taste breadcrumbs
  • to taste extra virgin olive oil

Steps

  • First, boil the spinach in a pot with plenty of boiling water for about ten minutes; once ready, drain them and let them cool completely, then squeeze them very well to remove all the water. In the meantime, cut the chicken breast into pieces.

    In a mixer, blend the chicken and set it aside; in the same mixer, add the well-squeezed spinach (make sure) and blend them.

  • In a bowl, combine the chopped chicken and spinach, add the Parmesan, breadcrumbs, salt, and pepper, and mix well. Meanwhile, prepare the ingredients for the breading: on one plate, pour the flour, in another beat two eggs, and in the last one, pour the breadcrumbs.

  • Take a ladle of the mixture and place it directly on the flour plate, flatten it, and shape it into a spinach chicken patty, also flipping it to the other side. Do the same with the rest of the mixture until all the patties are made (about 6-7 depending on size). Pass the floured patties through the eggs and finally through the breadcrumbs, making sure it sticks well on both sides and the edges.

  • Transfer the patties to the air fryer’s basket, add a spray of oil, and cook at 392 degrees for 10 minutes, flipping them halfway through and adding another spray of oil on the other side. Alternatively, they can be cooked in a hot oven at 392 degrees for 20 minutes, always flipping them halfway through, or in a pan with a drizzle of oil until golden brown.

    If desired, you can accompany them with a super simple cream made with: Greek yogurt, juice of half a lemon, a pinch of salt, and a drizzle of extra virgin olive oil!

Tips for you

✔ For a VEGAN version, you can replace the chicken with 250 g of mashed chickpeas and 60 g of chickpea flour, without adding Parmesan cheese.

✔ For this recipe, it is necessary to cook the patties directly in the basket of the air fryer without trays or parchment paper: this way, they will cook thanks to the air passing from 360 degrees from below to above, allowing for ideal air frying. Trays or parchment paper would block the air circulation inside the air fryer.

✔ You can use potatoes with the skin (new or organic) or remove it, no problem.
