It’s such a simple recipe that once you try it, you won’t be able to do without it. The tzatziki salad, unlike the usual sauce, includes cucumbers cut like spaghetti. It’s a tasty and fresh dish, perfect for summer.
The flatbread is very easy to make, using only whole wheat flour (or, if you prefer, all-purpose flour), water, and salt. You can also opt for ready-made flatbreads. Then, we’ll create super simple baskets from the flatbread, which we’ll cook for just a few minutes in the air fryer, serving the tzatziki salad in an original way, without a plate, and enjoying the crunchy flatbread along with the salad or afterwards. This recipe is very simple to make and requires just a few steps.

- 1 1/4 cups whole wheat flour
- 1/3 cup water
- 1 tbsp extra virgin olive oil
- 1 tsp salt (5 g)
- as needed extra virgin olive oil (for greasing the pan)
- 1 1/4 cups Greek yogurt
- 2 cucumbers
- 1 clove garlic
- 1 tbsp white wine vinegar
- 2 tbsp extra virgin olive oil
- 1 tsp salt (5 g)
- as needed fresh chives

Steps
Let’s first prepare the flatbreads. In a bowl, pour the flour, water, and salt; mix with a spoon and then combine everything with your hands. Add the extra virgin olive oil, continue to knead briefly and form a ball. Let it rest for about half an hour.
Divide the dough in half and roll out the sheets with a rolling pin. They should be very thin. Cook them in a non-stick pan greased with a drop of extra virgin olive oil for 2 minutes on each side. Let them cool.
Create the baskets from the flatbread: just fold the sides of the flatbread and pin them with toothpicks to hold them in place. Use about 4 or more if necessary. Transfer the flatbread basket to the air fryer and cook it at 375°F for about 3-4 minutes. Once the baskets are ready, you can remove the toothpicks.
Meanwhile, let’s prepare the tzatziki salad. In a bowl, pour the Greek yogurt, vinegar, extra virgin olive oil, salt, chives, and a finely crushed or minced garlic clove. I didn’t add it, but you can. Finally, you can also add the mint. Mix with a spoon. Also, clean the cucumbers by removing the skin, then cut them very finely using a simple vegetable peeler, creating cucumber “spaghetti”. Add them to the tzatziki sauce and mix.
At this point, pour the salad directly into the flatbread baskets, add a drizzle of extra virgin olive oil, and you can enjoy the salad accompanied by the crunchy flatbread.
