- 6 slices provola cheese
- 6 sun-dried tomatoes in oil
- 2 eggs

Steps
To prepare the zucchini bundles simply and quickly, start by thoroughly washing the zucchini and slicing them thinly using a mandolin. This step is crucial: obtaining thin slices allows you not to pre-cook the zucchini (e.g., grilling them), thus reducing preparation time and limiting the use of additional kitchen tools. Lightly salt the zucchini.
Place two slices of zucchini vertically on a work surface, slightly overlapping. Then, overlap two more slices horizontally, also slightly overlapping at the ends, to form a cross shape.
In the center of the cross, place a slice of provola cheese. On top of this, add a sun-dried tomato. First, close the slice of provola to enclose the tomato inside, forming a small bundle. At this point, also fold the ends of the zucchini slices towards the center, until you form the complete bundle. To maintain its shape during cooking, use a wooden toothpick to secure it.
Once all bundles are ready, pass them first in the beaten egg and then in the breadcrumbs with a pinch of salt, ensuring they are well breaded on all sides. Spray with a little extra virgin olive oil and proceed with cooking.
Recommended cooking methods:
• Air Fryer: cook the bundles at 375°F for about 12 minutes. In the last 4 minutes, gently turn them to brown the underside as well. The result will be a crispy coating with a melty and tasty center.
• Static Oven: place the bundles on a baking sheet lined with parchment paper and bake at 390°F for 20-25 minutes, turning them halfway through for even browning.
• Pan Cooking: heat a little extra virgin olive oil in a non-stick pan and cook the bundles over medium heat for about 10-12 minutes, gently turning them multiple times for even browning on all sides. If necessary, you can cover the pan with a lid in the first few minutes to promote more even cooking inside.
These zucchini bundles are ideal to serve hot as an appetizer or main course, but they are also excellent at room temperature. Enjoy your meal!

Zucchini bundles are a perfect base to customize according to your tastes or dietary needs. Instead of the filling with provola and sun-dried tomato, you can try equally tasty variations:
• With cold cuts: you can add a slice of cooked or raw ham for a richer flavor. They are also great with speck or mortadella, which pair excellently with zucchini and cheese.
• Other cheeses: if you prefer a more intense flavor, you can use smoked scamorza or caciotta.
• Vegan version: replace the cheese with a vegetable alternative (like cashew or soy-based vegan cheese) and omit the egg in the breading, passing the bundles directly in a batter with flour and water or in vegan breadcrumbs slightly moistened with oil.
