Zucchini Pizza in Air Fryer

Ingredients

  • 1 large zucchini
  • 3 tablespoons potato starch
  • 1 egg
  • Half mozzarella
  • 7 oz tomato sauce
  • to taste salt
  • to taste extra virgin olive oil
  • to taste fresh basil

Steps

  • Cut off the ends of the zucchini and grate it using the wide holes. Place the grated zucchini in a cotton towel and squeeze it well to remove all excess water.

  • In a bowl, put the well-squeezed zucchini, an egg, a pinch of salt, and the potato starch, then mix everything.

    Line the basket of the air fryer with a sheet of parchment paper and spread the mixture over it creating the shape of a pizza. Cook at 356°F for 10 minutes.

  • Meanwhile, prepare the tomato sauce by pouring the tomato sauce into a bowl, adding a pinch of salt and a drizzle of extra virgin olive oil. Pat dry a mozzarella and cut it into cubes.

    Take the zucchini pizza and season it while keeping it in the air fryer: spread the tomato sauce over it and add the mozzarella. Cook for another 3 minutes or until the mozzarella has melted.

    Plate and decorate with a few leaves of fresh basil. Enjoy your meal.

Tips for You

✔ You can top the zucchini pizza with any other ingredients you like best.

✔ You can also cook the zucchini pizza in a hot oven at 392°F for about 20 minutes or in a pan with a drizzle of extra virgin olive oil until golden brown.

✔ If you use fiordilatte mozzarella, I recommend letting it drain well and drying it before cutting it; this way it will not release liquid during cooking. Alternatively, you can use a melting cheese or mozzarella for pizza.

✔ To cook the zucchini pizza we used classic parchment paper, which prevents the dough from sticking to the basket.
