The zucchini skewers are tasty and quick to make. They can be prepared in 5 minutes and the cooking is super fast. You don’t even need to grill the zucchinis, making them even more simple to make. This dish is ideal even as a last-minute lunch or dinner, and can be filled with any deli meats and cheese you have at home. Thus, it can also be called a “fridge-clearing” recipe.
Cooking the zucchini skewers in an air fryer allows us to optimize time, as no preheating is necessary and cooking with this appliance is faster. Alternatively, they can be baked in the oven by increasing the temperature and time, or cooked in a pan. Below you’ll find all the instructions no matter your preferred cooking method.

Ingredients
- 1 zucchini
- 4 slices mortadella
- 2.1 oz melting cheese or provolone
- to taste breadcrumbs
- to taste extra virgin olive oil
- to taste salt

Steps
First, wash a zucchini and remove the ends. Using a mandoline, slice the zucchini into very thin slices, about 1 millimeter thick. Brush both sides of the zucchini slices with a little EVO oil. Coat them well in breadcrumbs. Add a pinch of salt on the surface.
Cut the mortadella into strips (the same size as the zucchinis) and the cheese into cubes or even better into small rectangles. Lay a slice of zucchini on a plate, place a strip of mortadella and a cheese cube at one end, then roll it up to form a roll. Repeat the step with the other zucchini slices. You’ll get about 18 rolls.
Now take long wooden skewers and thread about 6 rolls side by side. Make a total of 3 skewers. Add a spray of EVO oil and cook them in the air fryer with parchment paper (I used paper trays for the air fryer: FIND THEM HERE) at 356°F for 15 minutes, turning them with 5 minutes left. Alternatively, bake in a preheated oven at 374°F for about 25 minutes. You can also cook them in a pan: in this case, pour a good amount of oil and cook until golden, turning to brown both sides.
Serve hot or cold, enjoy your meal!

✔ You can use any type of deli meat, or simply only melting cheese for a vegetarian version.
