Bagels with Frittata and Turnip Tops

Bagels are a leavened dough shaped like a large ring and are baked in the oven after a brief boil in water. Today, I recreated and seasoned them to taste, in this case, inside I contrasted this bread flavor with a simple slightly bitter frittata with turnip tops.

This recipe was chosen by the admins of the Re-Cake group, which is nothing more than a game. Every month, a dessert proposed by the admins is recreated. There may be small variations, which change based on the rules each month.

Ingredients

  • 3 1/4 cups Whole Wheat Flour
  • 1/3 cup Type 0 Flour (or Manitoba)
  • 10 g Fresh Brewer's Yeast
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • Water (Warm)
  • 1 Egg Yolk
  • Sesame Seeds (or Poppy Seeds)
  • 4 Eggs
  • 1 bunch Turnip Tops
  • 1 clove Garlic
  • to taste Oil
  • to taste Salt
  • to taste Pepper

Preparation

  • In a bowl, mix the flours with sugar, yeast, and salt.
    Gradually add the warm water and knead until you get a firm and homogeneous dough.
    Lightly oil a bowl, place the dough inside, cover with plastic wrap, and let it rise for 1 hour and 30 minutes in a warm place.

  • On a floured surface, roll out the dough with a rolling pin and divide it into 6 parts.
    Shape into slightly flattened balls (diameter 3-4 inches).
    Place them on a baking sheet with parchment paper, create a hole in the center with a glass and enlarge it with your fingers.
    Cover with a cloth and let rise for 30 minutes in a warm place.

  • Bring a pot of water with a tablespoon of sugar to a boil.
    Drop the bagels in and boil for 1 minute on each side, then drain and place them on a rack to dry.
    Preheat the oven to 390°F.
    Brush the bagels with egg yolk and sprinkle with sesame or poppy seeds.
    Bake for 15-18 minutes until golden.
    Remove from the oven and let cool.

    In a pan, sauté the garlic with a drizzle of oil, then remove it.
    Add the cleaned turnip tops and sauté well. Season with salt and pepper.
    In a bowl, beat the eggs with salt, pepper, Parmesan, and the cooked turnip tops.
    Heat a lightly oiled pan and pour in the mixture.
    Cook until the bottom is set, then cover with a lid and turn off the heat.
    After 5 minutes, uncover, flip the frittata, and turn the heat back on to finish cooking.

  • Cut the bagels in half and fill them with a portion of frittata with turnip tops.
