Ingredients
- 3 1/2 cups all-purpose flour
- 1 cup water (warm)
- 3 tbsp olive oil (3 tbsp lard for the original version)
- 1 1/2 tsp salt
- 1 pinch baking soda

Procedure
Heat the water
Pour 1 cup of water into the bowl.
Set 122°F, speed 1, 1 minute.
Add the ingredients
Add 3 tbsp of lard (or 3 tbsp of olive oil), 3 1/2 cups of all-purpose flour, 1 tsp of salt, and 1 tsp of baking soda (if using).
Knead
Activate the mode Knead | Compact dough for 3 minutes at speed 4.
Let the dough rest
Remove the dough from the bowl, shape it into a ball, and cover with a cloth.
Let it rest at room temperature for 30 minutes.
Shape and cook the piadinas
After resting, divide the dough into 6 equal balls.
Roll each ball with a rolling pin until you get a disk of 8 inches in diameter and 1/8 inch thick.
Cook in a hot pan for 1-2 minutes per side until golden.
In a large bowl, mix the flour with the baking soda and salt.
Add the warm water and knead.
Pour in the oil and knead until you form a smooth and elastic dough.
Cover the dough with a cloth and let it rest for 30 minutes.
Proceed as above: divide into 6 pieces, roll out, and cook in a hot pan.
Tips and Variations
Want a more rustic flavor? Use half all-purpose flour and half whole wheat flour.
