Anchovy Pie

Single-serving anchovy pie, a delicious appetizer or a tasty blue fish dish with a Mediterranean flavor. The preparation is very simple and takes just a few minutes, especially if we have the fish cleaned by our fishmonger. The filling consists of simple ingredients: cherry tomatoes, olives, capers, cheese. You don’t need to be a great chef, with a few simple steps you’ll achieve perfect pies. All you need are some aluminum molds, prepare them right away, they are really delicious.

Ingredients

  • 1.1 lbs fresh anchovies
  • 4 tbsps pecorino romano (grated)
  • 2 freselle (Frisella)
  • as needed breadcrumbs
  • 10 cherry tomatoes
  • few black olives
  • 2 tbsps capers
  • as needed parsley
  • 1 clove garlic (optional)
  • as needed extra virgin olive oil
  • as needed salt
  • as needed pepper

Steps

  • Clean the anchovies, remove the head and the central bone by opening them like a book. Rinse them under running water to remove all residues. Dry them on absorbent paper,

  • Soak the freselle in water and crumble them.

  • Add the chopped tomatoes, minced parsley, capers, olives, cheese, chopped garlic if you like, salt and pepper, finally add a drizzle of oil and a little breadcrumbs. Mix everything well.

  • Grease the molds with oil, sprinkle them with breadcrumbs. Line them with the anchovies.

  • Fill with the stuffing.

  • Close the pie well, add a drizzle of oil and sprinkle with breadcrumbs. Cook at 392°F for 10 minutes in the air fryer, or at 356°F for 20 minutes in a ventilated oven.

  • Eat the pies warm, garnish them with mint leaves and lemon slices, if you like, add a drizzle of extra virgin olive oil and a sprinkle of grated lemon zest.
