Apple Muffins in Air Fryer

Ingredients

  • 1 egg
  • 3.4 fl oz milk
  • 2.7 fl oz sunflower seed oil
  • 1 pinch salt
  • 1/4 cup sugar
  • 3/4 cup all-purpose flour
  • Half packet baking powder
  • 1 apple
  • to taste ground cinnamon
  • to taste apricot jam
  • to taste lemon juice
  • grated lemon zest

Steps

  • Mix eggs, milk, and oil in a bowl with electric beaters or by hand. In another bowl, sift the flour, add sugar, salt, and baking powder.

  • Combine the dry ingredients with the liquid ones, add the grated lemon zest, and mix briefly with the whisk.

  • Pour the mixture into muffin cups. Fill them only halfway.

  • Add thin slices of apple on top, previously peeled and thinly sliced, drizzled with lemon juice. Sprinkle the apple slices with brown sugar and cinnamon. Add a teaspoon of jam to each muffin and spread it with a kitchen brush.

  • Bake the muffins in an air fryer at 320°F for about 15-20 minutes. Perform the toothpick test before removing from the fryer.
