Braised cabbage rolls are a simple dish with peasant origins, created to make use of the earth’s resources. This recipe was created with the intention of cleaning out what I had in the fridge. Ingredients
- 6 leaves Cabbage
- 3 Potatoes (Medium)
- 3.5 oz Cooked Ham
- 7 oz Scamorza (Or Mozzarella)
- 3 tbsp Butter
- 3 oz cup Milk
- to taste Nutmeg
- to taste Pepper
- Tomato Paste (One tablespoon)
- Half Onion
- to taste Extra Virgin Olive Oil
- 1 cup Vegetable Broth
- Salt
- 3 oz Espresso Cup of Milk
Steps
Blanch the cabbage leaves in salted water for a few minutes. Drain the water and remove the tough part.
Mash the previously boiled potatoes. Add the butter, scamorza, and ham. Mix well, season with nutmeg, salt, and pepper. Add a little milk to soften.
Prepare the rolls and wrap them well.
In a pan, heat the extra virgin olive oil with half an onion. Add the rolls and braise them by turning them over. Add salt, a little tomato paste for color, and add vegetable broth. Cook on low heat for about half an hour.
Plate and enjoy the rolls while they’re hot.
