Ingredients
- 4 squid (Medium)
- to taste stale bread
- 1 egg
- to taste green and black olives
- a few capers
- to taste parsley
- slices sweet dry sausage
- to taste grana cheese (Grated)
- to taste salt and pepper
- to taste extra virgin olive oil
- 1 clove garlic
- 1 glass white wine
Stuffing Preparation
Clean the squid. Cut the tentacles and wings into small pieces. In a pan with EVO oil, cook the squid for a few minutes, deglaze with white wine, salt, and pepper. Set the tentacles aside, and in the same pan, toast the previously grated stale bread.
In a bowl, place the tentacles, bread, an egg, cheese, chopped olives and capers, chopped parsley, salt if necessary, and to taste, add sweet sausage pieces and pepper. Mix everything well and fill the squid. Close them with a toothpick.
In a pan with EVO oil, brown a garlic clove and parsley stems. Remove the parsley and garlic and brown the squid evenly. Deglaze with wine, salt, and cook over low heat with the lid on for about 30 minutes.
Let the squid cool slightly and slice them, serve with a side of vegetables of your choice 😋
