Paccheri with Potato Cream, Sausage, and Mushrooms

Ingredients

  • 7 oz paccheri
  • 10.6 oz potatoes (Peeled)
  • 2 Pork Sausages (Fresh)
  • 7 oz mushrooms (Fresh or frozen)
  • 1 clove garlic
  • Half Onion
  • to taste
  • to taste Parsley
  • to taste grated Parmesan cheese
  • to taste extra virgin olive oil

Steps

  • Prepare a potato cream by boiling the peeled potatoes in salted water. Once cooked, blend them with an immersion blender to create a cream, and set aside.

  • In a pan with extra virgin olive oil, brown the garlic and onion. Remove the garlic, add the peeled sausage, brown well, and add the cleaned and sliced mushrooms. Cook for 15 minutes.

  • Drain the pasta al dente, mix with the sauce, and add the potato cream and Parmesan cheese. Plate and garnish with chopped parsley.
