Peach Tart with Almond Crumble

Peach tart with almond crumble is a delicious dessert to enjoy at any time of the day. For this dessert, you can use any type of peaches: yellow, white, flat. You can use your favorite shortcrust pastry recipe, or follow mine. The peaches are caramelized, and the addition of peach jam makes this dessert truly irresistible!

Ingredients

  • 2 1/2 cups All-purpose flour
  • 3/4 cup sugar
  • 2/3 cup butter
  • 2 eggs
  • 1 Lemon peel (Grated)
  • 1/2 tbsp baking powder
  • peaches
  • 3 tbsps peach jam
  • 2 tbsps sugar
  • 1 tsp Cinnamon
  • as needed Powdered sugar

Shortcrust pastry preparation

Proceed by making the classic well on the work surface or in a bowl. Add the cold, diced butter and start mixing it with the flour using your fingertips, then add the sugar and then the eggs, salt, and vanilla with the grated lemon. Then knead until you get a homogeneous and non-sticky dough.
Wrap the formed dough in a piece of cling film and let it rest in the refrigerator for at least 30 minutes.
To use it best, I recommend always rolling it out on parchment paper, it facilitates the operation and optimizes the result

Steps

once the shortcrust pastry is rolled out in the 9-inch tart pan, spread the peach jam on top.

  • Place the peaches, which have been previously peeled, sliced, and caramelized in a pan with sugar and a bit of cinnamon, on top.

  • Add the coarsely chopped almond granules on top and, if available, even the leftover shortcrust pastry in small crumbs.

  • Bake in the oven at 350°F for about 30 minutes. Let it cool slightly and dust with powdered sugar.
