Ingredients
- 2 cups all-purpose flour
- 7 oz ricotta
- 2 eggs
- 1/2 cup sugar
- lemon zest (grated)
- 1 pinch salt
- Half vial lemon flavor (optional)
- Half packet baking powder
- as needed powdered sugar
Steps
Place the ricotta in a bowl (let it sit in a strainer for a while to remove any excess water). Add the flour, eggs, sugar, grated lemon zest, salt, and baking powder. Finally, add the lemon flavor or the juice of one lemon. Mix first with a wooden spoon to obtain a coarse dough. Then transfer the dough to a lightly floured work surface and knead it gently. You should obtain a soft but not overly compact dough.
Once the dough is made, prepare a baking tray lined with parchment paper. Place plenty of powdered sugar in a small dish. With slightly damp hands, form balls of more or less the same weight. Once the balls are formed, roll them in the powdered sugar and place them on the baking tray.
Preheat the oven to 350°F and bake the cookies for 15 minutes until they are puffed and golden. Don’t worry about the cracks on the surface; it’s a characteristic of these delicious cookies. Remove the cookies from the oven and let them cool completely.
If desired, dust them with powdered sugar. If there are any left, store them for a few days in sealed food bags.
