Ingredients

  • 1 chicken (About 2.2 lbs)
  • 1.76 oz bacon
  • 1.76 oz veal (Ground)
  • 1.76 oz fresh sausage (Pork or chicken)
  • 1 egg
  • a few black olives
  • to taste bread crumbs
  • to taste nutmeg
  • to taste parsley
  • to taste garlic (Optional)
  • to taste extra virgin olive oil
  • to taste salt
  • a few potatoes

Steps

  • Cut the bacon, cooked ham, olives, parsley, and garlic into small pieces.

  • Pour everything into a bowl, add the peeled sausage, previously soaked and squeezed breadcrumbs, minced meat, nutmeg, grated cheese if desired, chopped garlic, olives, salt, and to bind everything together, add the egg.

  • Stuff the chicken with this filling, previously cleaned and washed, then sew or close the opening with toothpicks.

  • Place it in a pan with oil, drizzle with a glass of white wine, baste with oil, and salt. Cook in a hot oven for about an hour. Halfway through, add the potatoes in pieces, previously blanched in salted water for ten minutes.
