Last night I made this Apple and Yogurt Cake without Butter for three reasons: first, I didn’t have butter, so I easily replaced it with seed oil; second, I had two apples that were about to go bad; and third and most importantly, I had the leftover Kefir to filter.
The result is this tall and fluffy apple cake! As I have already explained in other recipes where I use Kefir, you can replace the 125 g dose with regular low-fat plain yogurt; the effect will be the same. Regarding the dose of seed oil, you can replace it with 70 g of butter if you have it, obviously at room temperature like the two eggs used in the recipe itself.

Ingredients for an Apple and Yogurt Cake:

- 1 3/4 cups all-purpose flour
- 2 apples
- 1/2 cup kefir (or 1/2 cup of plain yogurt)
- 1/3 cup potato starch
- 2 eggs
- 3/4 cup sugar
- 1 packet baking powder
- 1/4 cup vegetable oil
- to taste almond flakes
- to taste brown sugar
- to taste lemon juice
- to taste powdered sugar
Tools to prepare the Apple Cake with Yogurt:

- 1 Bowl
- Electric mixer
- Spatula
- Oven
Preparation of the Apple and Yogurt Cake without Butter:
The first step in making this fluffy cake is to slice the apples not too thin but not too thick either, place them in a bowl, and drizzle them with lemon juice. I haven’t indicated the amount of lemon since it varies according to your taste; the more lemon you add at this stage, the more it will be noticeable when you taste the cake.
Let’s turn on the oven and set it to 350°F with static mode. Now take a bowl and break the two eggs, add the sugar, and the 1/2 cup of yogurt (in my case, I added 1/2 cup of Kefir milk). Work with the electric beaters until you get a frothy and well-blended mixture.
Pour the vegetable oil and continue mixing. If you have butter, add it now instead of the oil. It should not be cold from the fridge, as it might not melt well during mixing and baking of this apple dessert.
Now, use a spoon to add the two previously sifted flours and the packet of baking powder; continue working our mixture for a few more minutes.
Take a round 24 cm pan and grease the bottom with either oil or butter. Pour half the batter and place apple slices all over the obtained base. Cover the apples with the rest of the batter.
Now place all the remaining apple slices, sprinkle with brown sugar, and add almond flakes.
Bake our apple and yogurt cake for about 40 minutes. Always do the toothpick test before turning off the oven, please.
Let our dessert cool in the pan before serving it with a nice sprinkle of powdered sugar.

Storage:
The apple and yogurt cake without butter can be stored in a cake holder for up to 4 or 5 days from its preparation.
