The recipe for Asim Potatoes has become my favorite way to flavor boiled potatoes for almost a year now. Some may call them lemon potatoes, some mayonnaise and lemon potatoes, and some just boiled potatoes. For Gaia‘s family, they are “Daddy’s potatoes” because only he prepares them at home; hence, they have become Asim Potatoes for me. With the bold and tangy taste of lemon expertly balanced with mayonnaise, this recipe was born. Thanks again to Gaia, her dad for sharing his recipe with me, and her mom for saying, “shall we invite Bea to dinner? I’ll just prepare a few things!”

Ingredients for Asim Potatoes:
for 2 people:
- 14 oz Potatoes (in my case, white)
- 2 tbsp Mayonnaise
- 1 tsp Salt
- 1 Lemon (juice of half a lemon)
- to taste Chopped parsley
- to taste Extra virgin olive oil
Tools for the recipe
- Stovetop
- 1 Cutting board
- 1 Pot
- 1 Fork
- 1 Potato masher
- 1 Spoon
Obviously, if you have a potato masher, the fork won’t be necessary.
Preparation for Asim Potatoes:
To prepare Asim Potatoes, we need a few ingredients and, above all, a few steps to reach the final result.
Let’s start by boiling the potatoes with their skins in plenty of water. Leave the skin on; otherwise, they absorb too much water during cooking.
Once cooked, we will remove the skin. You’ll see it comes off very easily and makes it easier to mash them.
Let them boil for about 30 minutes, 40 at most, otherwise they risk becoming too mushy and you’ll have a puree effect.
After this, check that they are cooked, drain them from the cooking water and mash them. This step should be done manually with a fork or a potato masher. Never use a mixer or other appliances, otherwise, you risk turning the potatoes into a mush.
Add the juice of half a lemon, which will be the dominant ingredient of our recipe. Finally, add the two tablespoons of mayonnaise, adjust with salt if necessary.
Mash everything well until you obtain a lump-free cream. However, do not turn it into a puree. Bea added a nice sprinkle of parsley as a final decoration, while Gaia’s mom suggests adding a drizzle of extra virgin olive oil.
This side dish can be served either hot or cold, as you prefer.
