Bread Roll with Pickled Sea Fennel

I told you a few days ago about the Rinci Sea Fennel Delights, and today I present the first recipe I’ve made with this sea fennel: Bread Roll with Pickled Sea Fennel and Mortadella with Pistachios.
It’s a tasty finger food that we can serve for a colorful and delicious aperitif or as an appetizer. Versatile because you can vary the filling as you like, and tasty, these Bread Rolls with Sea Fennel and Mortadella with Pistachios disappear very quickly. In my version, you will find Extra Virgin Pickled Sea Fennel and Mayonnaise with Sea Fennel in addition to mortadella and chopped pistachios.

Ingredients for 4 Bread Rolls with Pickled Sea Fennel:

  • 6 sprigs Sea Fennel from Conero (from Rinci Sea Fennel Delights)
  • 2 slices Mortadella with Pistachios
  • to taste Chopped Pistachios
  • to taste Mayonnaise (with Sea Fennel from Rinci Sea Fennel Delights)
  • 2 slices White Bread

  • 1 Silicone Rolling Pin
  • 6 Toothpicks
  • 1 Knife

Preparation of Bread Rolls with Pickled Sea Fennel and Mortadella with Pistachios

  • The preparation of Bread Rolls with Pickled Sea Fennel is very simple as I showed you in yesterday’s Instagram live. Few steps and few ingredients for a really tasty and colorful result.

    Start by placing the two slices of white bread on your work surface and gently flatten them with a rolling pin.

    Once they’re thin, you can cut them in half, as you see in the photo, the rolls aren’t long because I obtained two from one slice.

  • Now take the two slices of mortadella and cut them into strips that should not be too thin and should be slightly smaller than the strips of bread.

    Place them over the slices of bread and finally add the Sea Fennel previously drained, at least four hours before, from the extra virgin olive oil.

  • Close the rolls gently and insert a toothpick into them.

    Now, coat the two sides of the rolls with the Sea Fennel Mayonnaise from Rinci Sea Fennel Delights. Finally, pass the edges in the chopped pistachios that will give that crunchy note to our finger food.

  • Place the rolls on a baking sheet covered with parchment paper and bake them for about 5 minutes in a preheated oven at 392°F in static mode. If you’re using the grill mode, about 3 minutes will suffice. Just enough time to make the outer part of the bread crispy.

    Our Bread Rolls with Sea Fennel and Mortadella can be served hot or cold; they maintain their taste and flavor as if freshly prepared.

Variations:

Of course, I prepared this recipe with Sea Fennel because I’m trying to create recipes with this typical product from the Conero Riviera and thus from my beautiful Marche Region. If you don’t have them and are curious to try them, you can contact the company Rinci – Sea Fennel Delights and purchase them; they ship throughout Italy.

As for the filling, I paired Mortadella and Pistachios because they are the two ingredients that, for me, best matched these Bread Rolls. You can easily substitute the mortadella if you don’t like it with prosciutto, cooked ham, speck, or maybe Hungarian salami. The chopped pistachios can be replaced by seeds of your choice.
