Bea’s Recipes presents a tasty and appetizing appetizer or second course: Bundles with Philadelphia and bacon! As I mentioned last night, my dinner was all about culinary experiments. I found two recipes yesterday afternoon, printed them, and went shopping, then I got to work!
Satisfying results on both fronts, both the main course and the dessert!!!
The recipe for Bundles with bacon, as you can already guess from the filling, I printed from the Philadelphia website!!! However, my variation is in the meat; I couldn’t find chicken at the supermarket, so I made them with very thinly sliced pork loin. Then I also took a license with the name, on the website they are called Chicken Bites with Bacon, I called them Bundles with Philadelphia, as mine looked more like bundles than actual bites, and I also swapped the bacon with the always excellent bacon, because I love it!

Ingredients for Bundles with Philadelphia for two people:
- 3.5 oz light cream cheese (similar to Philadelphia)
- 14 oz pork loin (thinly sliced)
- Half onion (finely chopped)
- carrot (pieces)
- celery (pieces)
- 10 slices bacon
- 1 coffee cup white wine
- 3 tbsps extra virgin olive oil
- to taste salt
- to taste black pepper
- to taste chopped parsley (finely)

Preparation of Bundles with Philadelphia and bacon:
Let’s start preparing our Bundles with Philadelphia or cream cheese starting with the meat, let’s make the pork loin slices thin by using a meat tenderizer, they need to become almost like tissues. In a bowl, work the Philadelphia, or cream cheese, with a little salt and pepper and some chopped parsley for color and flavor.
On a work surface, lay down the slice of lean bacon, place the pork loin slice on top, and in the center put a teaspoon of Philadelphia.
Now let’s use our hands to form the bundles, the cream cheese should stay at the bottom, it will be your base, while the pork loin and bacon will form the tuft that we will close with some kitchen string, do not pull too tight otherwise the bacon might tear.
Now let’s cook everything in a non-stick pan where we sauté chopped onion in extra virgin olive oil with some pieces of carrot and celery.
Once the onion has softened, deglaze with a coffee cup of white wine and add the bundles with Philadelphia. Sprinkle with salt, pepper, and a bit more parsley. Cook over medium-high heat and covered for about 5 minutes on each side. After this time, lower the heat and continue cooking for another 5 minutes on each side, the meat is very thin, so it doesn’t require long cooking times, but of course, it depends on your taste.
The Bundles with Philadelphia and bacon are ready to be served at the table, they can be a great appetizer or a tasty second course as in my case.

Storage of Bundles with Philadelphia:
The Bundles with Philadelphia and bacon can be stored in the refrigerator, closed in a container with a lid, for up to 3 days. You can also freeze them and keep them in the freezer for several weeks.
Variations:
The Bundles can be made with any type of spreadable cheese to your liking, even with ricotta they turn out delicious. The bacon can be replaced with loin, bresaola, or classic prosciutto. However, cooked ham is not recommended because during cooking it might fall apart, losing the bundle shape.
