The Chicken Bites with Rustic Chips are small finger foods to serve during an aperitif or as an appetizer. They are really quick to prepare and require only a few minutes of baking. I prepared them on Sunday, March 29th live with Jasmine from the blog A tutta Gola. She was making stuffed rolls with ham and spinach while I made these super crunchy chicken bites. Why did we prepare them together? Obviously, for the W il Pollo event! An event dedicated to children so they can help mom in the kitchen. The main ingredient had to be Chicken and we had fun preparing these two dishes together thanks to Instagram.

Ingredients for chicken bites for two people:
- 14 oz chicken breast (cut into bites)
- 1.75 oz chips, fried, packaged
- to taste Breadcrumbs
- to taste Extra virgin olive oil
- 1 pinch Salt
- 1 pinch Black pepper

Preparation of chicken bites with rustic chips:
The recipe for chicken bites with rustic chips is really very simple and as you noticed from the list of ingredients, not many things are needed. Therefore, we start by setting the oven to 350°F in static mode. Take a bowl and break the rustic chips into pieces not too small. As you can see from the photo, the pieces of chips should be visible and felt with every single bite. Now add to the rustic chips, which we have broken in the bowl, a few tablespoons of breadcrumbs to which we will add a pinch of salt and pepper. Then take the chicken bites and coat them well in the breading, pressing lightly to adhere the chips to the chicken.
Place the bites on a baking sheet lined with parchment paper. Drizzle everything with a little extra virgin olive oil and bake. Remember ten minutes per side, set a timer so you won’t risk forgetting them in the oven.
After the twenty minutes of cooking, you will have chicken bites with rustic chips ready to enjoy. You’ll see that the kids will go crazy with joy, especially if they participated with you in preparing this simple dish.
