Chicken Breast and Pistachio Rolls

After desserts and appetizers, here we are with a recipe for a main course, the chicken breast rolls with ham filling and pistachio coating! A very simple recipe, with only three ingredients, economical and quick. Believe it or not, between preparation and cooking, we’ll only spend about 30 minutes.

This recipe dates back to May 2012, so it has been on the blog for several years, but with a really bad photo, it wasn’t among the most appreciated by you readers. I hope that with this photo change, I can encourage you and make you decide to try and therefore enjoy this chicken breast main dish.

I first prepared it after finding inspiration from a colleague’s blog, and over the years, I tested various fillings, with and without cheese, so today I can tell you which is my preferred filling. I think the sweetness of ham is perfect with pistachio. I’ve tried it with prosciutto and mortadella, adding aged cheese or spreadable cheese. But the first remains my favorite version. Of course, you can try and let me know which filling you prefer!

Ingredients for Chicken Breast and Pistachio Rolls Recipe

  • 4 slices chicken breast
  • 4 slices ham (or other deli of your choice)
  • 4.23 oz pistachio crumbs
  • as needed extra virgin olive oil
  • as needed onion (chopped onion, in my case white)
  • 1 pinch salt
  • 1 pinch pepper

Steps for the Delicious Chicken Breast Rolls Recipe

  • The steps to follow are really few, easy and quick, so the first thing I recommend is to have all the ingredients and tools necessary for preparing this recipe for chicken breast and pistachio rolls ready in front of you.

    Let’s start by placing a wooden cutting board on the work surface, chop the onion first, just a little is enough, no need to waste a whole one. Set aside. Now take the chicken breast slices, flatten them with the meat tenderizer, remember not to break them. Be decisive but not too violent against the poor chicken meat.

    Pour the pistachio crumbs into a bowl large enough to turn the rolls inside. Take the ham and keep it close to the rest of the ingredients. Also, keep the skewers or toothpicks nearby. We can then start.

    After beating the meat, place the slice of ham, or another deli you have chosen, a pinch of pistachio crumbs on top, and roll. Roll in the pistachio crumbs and secure in two points with the toothpick. You can also do as in the video recipe above, I rolled the rolls, secured the meat with toothpicks, and then used my hands to add the pistachio crumbs so as not to have too much excess or waste it.

  • We are ready to proceed with cooking. See? Easy-peasy recipe so far! Pour a drizzle of extra virgin oil into the non-stick pan, add the finely chopped onion and let it soften. Then place our rolls, the flame is medium-high. This will allow the creation of a nice external crust on the chicken rolls.

    Then lower the flame and place the lid on the pan. During the cooking phase of the pistachio crumb rolls we will have to turn them several times to prevent them from cooking on only one side. So be careful and don’t stray too far from the stove. Sprinkle with a pinch of salt and pepper during cooking. Once ready, about 20 minutes of cooking, we will be ready to serve this chicken main dish.

Variations

As you imagine, the filling of the rolls is your choice, I suggested ham because I believe it is the right combination of flavor with the pistachio crumbs. When we tried with prosciutto or salami, they always turned out too salty for our tastes. Perhaps choosing a sweet prosciutto could solve this issue. If you want, let me know in the comments!!!
