Chicken Hamburger with Vegetables and Scamorza Cheese, a light yet flavorful main course. I spotted this recipe on a website, so I decided to try it to see if it was worth sharing with you. A quick and easy main course to prepare, to cook in a pan or in the oven; I think you can also cook the chicken hamburgers with scamorza in an air fryer if you want to try.
These chicken burgers with vegetables are a complete dish to serve all year round, you can accompany this main with a light side dish like I did. I chose some baby spinach that I let wilt in a pan with a drizzle of extra virgin olive oil and a tablespoon of water.
I simply cut the scamorza into very small pieces and mixed it into the mixture to better taste its flavor. The carrot and the zucchini are available all year round, you just need to grate them well with a cheese grater or with a mandoline.

Ingredients for 4 Chicken Hamburgers with Vegetables
- 10.6 oz ground chicken meat
- 1 carrot (medium size)
- 1 zucchini (medium size)
- Half smoked scamorza cheese (you can also choose non-smoked scamorza)
- 2 tbsp breadcrumbs (heaping)
- 1 egg (whole)
- 1 pinch salt
- 1 pinch pepper
- 1 drizzle extra virgin olive oil

Steps for Chicken and Vegetable Hamburger Recipe
Let’s start the recipe for ground chicken hamburgers by grating the vegetables. We can use a cheese grater, a mandoline, or finely julienne them with a knife if you know how or with a julienne grater. I used a classic grater with larger holes. Then, we pour both the grated carrot and zucchini into a tall and generous bowl, where we will mix all the ingredients for our chicken hamburgers.
Now, take a cutting board and a knife without a sharp edge. Cut half of the scamorza, in my case smoked scamorza, and cut it into many small pieces. Pour the pieces of scamorza into the bowl. We are ready to start mixing the mixture.
Then add the ground chicken meat to the bowl. Sprinkle with salt and pepper, add the two tablespoons of breadcrumbs. Lastly, crack the egg and place it on top of the ingredients already in the bowl. Now, use your hands to mix the whole mixture until it reaches a nice consistency; all the ingredients should be well combined since we will press them into the hamburger press. Take a non-stick pan and pour a drizzle of extra virgin olive oil inside. With the help of the hamburger press and burger wrap sheets, prepare at least two hamburgers per person. Press well to ensure that during cooking, our chicken and vegetable hamburgers will not break. As you have seen, there are no ingredients such as milk or cheese that can help us further combine our meat mixture.
Turn the heat to medium and gradually place the meat hamburgers in the pan. Let them cook for a few minutes per side to form a nice crust, then lower the heat, put a lid on the pan, and let them cook for at least 30 minutes. Remember to turn the hamburgers several times during this time.
Meanwhile, if you want to accompany this main course with baby spinach like I did, you can take a non-stick pan, pour a drizzle of extra virgin olive oil and a couple of tablespoons of water at the bottom, place the spinach leaves after washing and slightly patting them dry with kitchen paper. Sprinkle with a bit of salt. Cover with a lid and let them wilt slowly over low heat.
When the meat and vegetable hamburgers are ready, we can serve them at the table, maybe with mayonnaise or a yogurt sauce. I just have to remind you that I am waiting for you here in my kitchen every day with many quick and delicious recipes like this one!!! I wish you a good appetite!!!

Storage and Variations of the Chicken Hamburger Recipe with Vegetables and Cheese
You can store the meat and vegetable hamburgers in a container after letting them cool completely at room temperature. Then you can put them in the fridge to consume them within a couple of days or store them in the freezer for a couple of weeks.
Variations that come to mind can include replacing the scamorza with grated cheese, which is easier to find already in our fridge. You can change the carrot and zucchini to other vegetables of your choice.
Obviously, you can also replace the ground chicken with turkey meat or the more classic beef for hamburgers.
