Creamy Pasta with Radicchio and Bacon

Le Ricette di Bea presents Creamy Pasta with Radicchio and Bacon, a dish full of flavor yet delicate at the same time, very creamy you will see. I have to say something before the recipe, I made an immense effort for this choice: I don’t eat radicchio! But thinking about my dear blog, could I really not have even half a recipe with radicchio? It seemed really bad, so for the love of the blog and my readers, I made this effort. Once the choice was made, I had to not see it on the plate, so I blended it into a delicate cream. Ingredients for Creamy Pasta with Radicchio and Bacon

  • 2 cups Pasta (in my case fusilli)
  • 7 oz Radicchio
  • 5 oz Smoked Bacon
  • Onions (white)
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • 1 to taste Parmesan Cheese (grated)
  • 1 to taste Extra Virgin Olive Oil
  • 1 to taste Parsley (chopped)
  • 1 teaspoon Honey

  • Pan you need two
  • Pot
  • Blender / Mixer
  • 1 Wooden Spoon
  • 1 Knife
  • 1 Cutting Board

Preparation

  • The recipe is very simple, few steps and the cooking time is really short. So let’s start by putting the water for the pasta on the stove. Take two pans, in one we are going to brown the smoked bacon without oil, please. Wash the radicchio well and cut the leaves into strips not too large, so in the pan, it will wilt faster. In the other, pour a drizzle of extra virgin olive oil and sauté the finely chopped half onion. Once the onion has wilted, add the radicchio strips, sprinkle with a bit of salt, pepper, and the tip of a teaspoon of honey. My dear friend Alessia revealed this trick to me that softens the bitterness of the radicchio.

  • Cover the pan with the lid and let it cook until the radicchio is completely wilted. If necessary, you can add a splash of water. Boil the pasta you have chosen, as shown in the photo I chose fusilli, I go crazy for creamy sauces with them. The pasta must be cooked al dente as we will then toss everything in the pan. While the pasta is cooking, we blend the radicchio in the mixer and then pour the obtained cream into the pan where we sautéed the smoked bacon. Once the pasta is drained, toss it in the pan with the creamy radicchio and bacon sauce. Before serving the Creamy Pasta with Radicchio and Bacon, a good sprinkle of grated Parmesan is a must, and lunch is served!
