Ingredients for Pan-Fried Asparagus
- 1.1 lbs Asparagus
- Onions (chopped)
- to taste Salt
- to taste Black Pepper
- to taste Parsley (chopped)
- to taste Lemon Juice
- 1 White Wine
- Extra Virgin Olive Oil

Preparation
Let’s start by washing the asparagus and removing the bottom part, which is usually whitish and tough. Then finely chop half a white onion and chop the parsley even finer; I don’t like finding it as leaves in the dish. After completing these two steps, place a non-stick pan over medium-low heat and sauté the onion in extra virgin olive oil. I’m not very generous with oil; the amount depends on you. Since we’re always on a diet, I use just enough.
Once the onion is sautéed, deglaze with the espresso cup of white wine and add the asparagus. Sprinkle with salt, pepper, chopped parsley, and drizzle with the juice of half a lemon. Lemon is a good match for us, it leaves a slightly bitter aftertaste that we like. If you think you might not like it, skip this step. Let it cook for about ten minutes on high heat and covered, adding a bit more white wine if necessary.
If you can, after the first ten minutes, without breaking the asparagus, try turning them to the other side. Cook for another five minutes or so; don’t overcook them, or they risk falling apart.
Serve them as a side dish with any dish you’ve chosen for dinner. We paired them with a simple, but delicious buffalo mozzarella and some cured ham from Norcia. I just have to add that this is a good seasonal side dish with Flavorful Pan-Fried Asparagus. See you in the next recipe!

Storage:
You can store the pan-fried asparagus in a lidded container in the refrigerator for two to three days. Otherwise, once they have completely cooled, you can keep them in the freezer.
