Oven-baked potatoes with sausage is one of the most popular recipes in Italian winter cuisine. Everyone at home has prepared it at least once in their life: sometimes the potato was undercooked, other times the sausage was overcooked, too much oil or too much salt.
We have tried and tried until we reached the right compromise that made this recipe great for every single Italian home and beyond.

Ingredients for two servings:
- 6 New potatoes
- 5 Sausage
- 1 clove Garlic
- to taste Extra virgin olive oil
- to taste Rosemary
- to taste Salt
- to taste Black pepper

Preparation of oven-baked potatoes with sausage:
As I mentioned, my recipe is foolproof because the potatoes will never be overcooked and the sausage never raw, and I’ll explain why. First, turn on the oven in static mode at 356°F (180°C); there’s no need to set it higher as you risk cooking the potatoes too quickly.
Once the oven is on, we prepare the ingredients: peel the potatoes and cut them into pieces of about 1.18 inches (3 cm). Consider that I got about 9 pieces from each potato. The same goes for the sausages; they shouldn’t be too large or too small, I cut each sausage into 4 pieces.
Put all the potatoes in the chosen baking dish, drizzle them generously with extra virgin olive oil, and sprinkle with pepper. Mix everything with a wooden spoon or your hands. Crush the garlic and place it in the dish with various sprigs of rosemary; the amount of these two ingredients depends on your taste.
Bake the potatoes for about 15 minutes without touching them with the wooden spoon or anything else. After this time, add the sausage pieces, without removing the skin, placing them here and there in the dish.
As seen in the photo, the potatoes are already halfway cooked. Return to the oven and let them cook for another 15 minutes or so, without touching them.
After this time, check the cooking and sprinkle with salt. Never, ever add it before this stage because, unfortunately, salt softens the potatoes. Keep in mind that to achieve perfect cooking, my oven takes about 40 minutes.
As you have seen, the times I indicated are 15 minutes for the potatoes alone, then again after adding the sausages. In short, 10 minutes are missing. You need to play with this time with your oven; you’ve been cooking with it for years, so you should know it well.
I suggest trying a potato and checking how many minutes may be left for cooking. If your oven is similar to mine, it’s another 10 minutes; otherwise, let it be less.

The two things to do for a foolproof cooking of oven-baked potatoes with sausage are: never put the potatoes in the oven together with the sausages because the cooking times are different, and never add salt until a few minutes before serving this super appetizing and flavorful main course at the table.
