To celebrate Roast Chicken Day on October 2nd, I thought of offering you this recipe: fried chicken bites with batter and panko as breading! The theme of this ninth edition is: Roast Chicken Sound Experience, to enhance the sound of crunchiness in every recipe that is based on the use of chicken!
To not present you with the usual, overdone classic roast chicken, I thought of these delicious and crispy fried chicken bites with batter and homemade panko breading! I have the pleasure and honor of being selected to participate for the second time in this culinary and sound marathon dedicated to chicken. Last year the theme was centered around grandparents and so I proposed the roast chicken with my grandmother Sandra’s recipe. This year I decided to dedicate my recipe for #RoastChickenDay to the little ones, who often, in front of the classic roast chicken, make faces, focusing the most on the breast and not on the other parts of the whole chicken. I thought of this recipe dedicating it to the daughters Rebecca and Melissa, “the twins”, of my cousin Paolo and his wife Claudia. Those who read and follow my social profiles will surely remember them because they participated in the video recipe of witches’ gelatin with mint syrup, prepared for Halloween last year. Thinking of the little ones, I decided to prepare chicken with panko and perfect batter for crunchy and dry frying! You will hear how good this chicken sounds! Below I leave you both recipes, to prepare the homemade panko and the batter. You will also find the chicken bites with rustic fries cooked in the oven. Ingredients for preparing two servings of fried chicken bites
- 1.1 lbs chicken breast
- 1 egg (at room temperature)
- 1/2 cup flour
- 1/4 cup sparkling water (very cold from the fridge)
- 1 pinch salt
- as needed panko (homemade)
- 1 quart vegetable oil (for crunchy frying)

Steps for the recipe fried chicken bites with batter and panko
Let’s start the preparation of this recipe from the batter. Take a bowl, break the room temperature egg into it. Add a pinch of salt and work with the whisk, gradually incorporating the flour with a spoon. Better if you also use a sieve to avoid lumps.
Once the flour is finished, pour in the sparkling water, which should be very cold from the fridge. Mix well, eliminate any lumps, cover with plastic wrap and refrigerate. Let it rest for at least 30 minutes.
After this time, we can proceed. If you don’t have panko, you can also prepare it in advance with the recipe I have already published here on the blog.
Take a wooden cutting board and a knife without a blade. Place the chicken breast on the board and cut it into cubes more or less the same size.
Heat the vegetable oil for frying in a suitable pot for frying. I recommended one in the list of useful tools found above. Retrieve the batter from the fridge and dip the chicken bites in it. Then pass them in the homemade panko and proceed with cooking.
Using the slotted spoon scoop out the beautifully golden and crispy bites and place them on a tray covered with frying paper or paper towels. Choose the sauce, or sauces, to serve at the table along with the crispy chicken chunks and remain silent: you will hear how good this chicken sounds!

Tips and variations for the recipe fried chicken bites with batter and panko
Tips: do not keep the oil temperature too high, you risk burning the chicken bites externally, leaving them raw inside. Try to drain the chicken cubes from the batter well, so they don’t end up too soaked and the panko doesn’t slide off with the batter during frying.
Variations: if you do not want to use panko for breading, you can choose a coarse breadcrumbs. If you do not want to use batter, you can beat an egg with a pinch of salt and proceed with the classic breading of egg, flour, and breadcrumbs.
