This morning I present to you the Gelatin with Mint Syrup, a fresh and fragrant spoon dessert, perfect all year round, easy to prepare. When we think of a Halloween Recipe what comes to mind? If you have two Twins and a Magic Potion to prepare, very likely you will think of the Gelatin with Mint Syrup!

An easy to prepare spoon dessert, quick with few steps and ingredients. You can prepare it with the little ones as I did, together with Rebecca and Melissa I made this dessert and we enjoyed it for snack. We had fun while making this intense green gelatin, with an unforgettable aroma. Dressed as witches, we made this colorful and delicious potion!

Ingredients for 4 servings of Gelatin with Fabbri Mint Syrup

  • 2 1/8 cups water
  • 2 tablespoons acacia honey
  • 2 tablespoons mint syrup (from Fabbri 1905)
  • 2 bags green tea
  • 0.53 oz gelatin sheets (or vegetarian gelatin for desserts)
  • A few leaves mint

Please remember, consider the 10 minutes of resting for the gelatin sheets or vegetarian gelatin in a bowl with water, which should not be the water from the indicated dose that will instead be needed for boiling the green tea and fresh mint leaves.

Tools for Gelatin with Mint Syrup

  • 1 Ladle
  • 2 Spoons
  • 1 Small bowl
  • 1 Stove
  • 1 Refrigerator
  • 8 Glasses

If you want to make the dessert even more appealing, you can use bowls or molds instead of glasses. We were making 8 servings of mint gelatin and therefore chose glasses because they are more convenient and wide enough for the kids to pour the gelatin directly inside.

Steps for Fabbri 1905 Mint Syrup Gelatin Recipe

  • We start the preparation by placing the gelatin sheets in a small bowl with cold water, setting a 10-minute timer. Meanwhile, we focus on the rest of the recipe for gelatin with mint syrup.

    Place a small pot on the stove containing the indicated 2 1/8 cups of water. Turn on the heat and wait for the first bubbles to form in the water. Turn off the heat and place the green tea bags and fresh mint leaves in the water. Let steep for about 10 minutes. After this time, we can strain the green tea with a strainer, then let it cool for another 10 minutes.

    After this resting time, we can proceed. Add to the small pot with the strained green tea, the two tablespoons of acacia honey, and the two tablespoons of mint syrup. Squeeze the gelatin sheets well and insert them, sheet by sheet, into the small pot with the other ingredients, stirring with a spoon or a hand whisk. This ensures no residue of the gelatin sheets.

    If you watch the video recipe below the first photo, you’ll see that I prepared two mint magic potions with Rebecca and Melissa, so they could both have fun and not fight over the bowl or ingredients. We thus obtained 8 glasses of Mint Syrup Gelatin from Fabbri Family.

  • We can now take the glasses, bowls, molds, or other containers chosen to serve the mint syrup gelatin being made today. Also take a ladle or a large spoon, which will be useful for gradually pouring our mixture into the glasses.

    Distribute the liquid into the molds and let it rest in the refrigerator for at least two hours. Honestly, if you have more time, it’s recommended, because the longer the mint gelatin rests in the refrigerator, the more homogeneous and well-set the result will be.

  • After two hours we can remove the glasses from the refrigerator, obviously only the amount we’re going to consume. For example: if there are 4 of us, we’ll take only four glasses or molds from the refrigerator, leaving the others to rest without changing shelves or anything else.


    If you like, you can then decorate with fresh mint leaves and add, which my whole family recommends doing, hazelnut cream. We went literally heavy on the jar and definitely overdid it! A true indulgent temptation!

Tips and storage:

Some tips I already provided during the recipe text for the sweet mint gelatin but I highlight them again in this paragraph. Very important is the resting of the gelatin sheets in the bowl with cold water. Not a minute more or less.

Another very important step is the ambient temperature resting and relative green tea infusion. We must leave the bag for at least 10 minutes in water along with the fresh mint leaves. After straining the tea we must let it cool for another 10 minutes so that it’s not too hot to continue with the recipe.

Third and not least in importance is the refrigerator rest of the gelatin, which is the two hours indicated in the text. This is the minimum resting time for a good dessert result. However, I recommend if you’re not in a hurry, to leave the mint gelatin in the refrigerator even longer so that it can completely cool and gel well remaining smooth and with good consistency.

You can store the mint gelatin in the refrigerator for a couple of days, for this reason I recommend preparing it the same day you decide to serve it. Since it’s a really simple recipe that doesn’t require many steps, you can easily prepare it in the morning and enjoy it in the evening with your friends or family.
