Bea’s Recipes presents a really easy recipe, the Grilled Eggplants with Greek Sauce, a side dish that will amaze your palate and your guests. The Greek sauce I used in this recipe was introduced to me by Riccardo. Riccardo, like me, is passionate about cooking, but he always tends to try new dishes and new combinations to impress friends dining at his place.

This Greek sauce is used to serve grilled chicken, but I wanted to try it paired with eggplants. I’d say the combination is very tasty; the Greek sauce is fresh and delicate and pairs really well with the grilled eggplants.

Ingredients for Grilled Eggplants

  • 4 Eggplants (medium-large)
  • 1 jar Greek yogurt
  • 1 tablespoon Mustard
  • 1 pinch Paprika
  • to taste Chives
  • Extra virgin olive oil
  • pinches Salt

Necessary Tools for Preparing Grilled Eggplants:

  • Cast iron grill
  • Hand whisk
  • 1 Bowl
  • 1 Knife
  • 1 Tongs

Preparation of Grilled Eggplants:

  • If we want to prepare grilled eggplants, where do we start? So, we take the eggplants, slice them into rounds that are not too thin, arrange them on a tray, and sprinkle with salt. We take the grill, in my case, it’s the cast iron plate used directly on the kitchen stove, and start grilling our eggplants. Meanwhile, we prepare the Greek sauce. Take the jar of Greek yogurt and pour it into a bowl. Add the tablespoon of mustard and a sprinkle of parsley or, as per the ingredient list, you can opt for chives, add a pinch of paprika as well. Using a hand whisk, work until it becomes a thick and uniform colored sauce. When all the eggplants are grilled, arrange them on a tray, drizzle extra virgin olive oil over their surface and sprinkle with salt if necessary and finely chopped parsley. Serve this side dish of grilled eggplants with Greek sauce to our guests and you’ll see the result will be excellent and you won’t regret it.
