As for me, I can tell you that until a few weeks ago I didn’t even know about this typical Leccese recipe, also known as Salentino Coffee.
When Mariarosaria, the beautician who works at the Maison de Beauty beauty center of my friend Maila, wrote me her recipe through IG chat, I was convinced and tried it. The enthusiasm in transcribing it, the little hearts she added in the chat, and, I’m sure, the moments she lived drinking this coffee pushed me to run to Grandma Sandrina to steal her Moka with some coffee and go home to try it! This iced coffee is typical of southern Italy, to prepare both at home or to enjoy at the bar sharing stories, tales, and moments with those who will sip this cold coffee with us.
When you’re looking for a fresh recipe, refreshing, and above all easy, what comes to mind? I was looking for a recipe to use the Almond Milk Syrup from Fabbri 1905 that I received as a gift a few weeks ago. After sharing with you, through social media, all the products that were in the mega package, I learned of this recipe not only from Mariarosaria but from many others of you. You are a great cooking encyclopedia for me, year after year. This recipe is indeed very famous, but I didn’t know it, I have to admit my ignorance even though I am a person who madly loves coffee.
A typical recipe that I absolutely had to prepare and share with you because I’m sure there are still people among us who, like me, didn’t know it yet. I’ve also made the video recipe for you, with the three fundamental steps clearly visible. I can’t convey the aroma of this cold coffee with the video, but I’m sure if you try this recipe, you’ll be able to smell it!!!

Ingredients for Two Homemade Leccese Coffees
- 3 coffee (preferably made with a moka pot)
- 4 tablespoons almond milk syrup (in my case from Fabbri 1905)
- 8 cubes ice
Three ingredients, easier than that the shopping list for a recipe has never been!!!
Tools for the Leccese Coffee Recipe
- 2 Glasses
- 1 Moka Pot
- 1 Spoon
Instead of coffee prepared with the moka pot you can use coffee pods. For example, I ran to Grandma Sandrina‘s house to get her moka pot. I don’t have one at home, I don’t really like moka coffee, I prefer coffee from pod machines or capsules. I know, I know, it’s not real coffee but I like it better.
For this reason, I list the moka pot in the list of necessary tools to prepare this recipe because it respects the Salentina Coffee recipe, but you can safely use a coffee machine.
I didn’t then indicate the ice cube machine or the tray or bag for making ice at home. You can make ice with the specific bags or with the freezer tray, the classic one with round molds. I went to get it at the first chalet near home.
Steps for the Leccese Coffee Recipe, the summer drink to enjoy cold
As mentioned, it’s a very simple recipe, only three ingredients, to prepare the Homemade Salentino Coffee. Let’s start by taking the Moka, pour the water into the small tank until it touches the valve. This step is very important, in fact, not exceeding this level will ensure an excellent coffee. Place the funnel filter and add the ground coffee. To prepare two glasses of Leccese iced coffee, you will need at least three cups of coffee, so the three-cup moka will be perfect.
Many of you have written to me that they prepare Salentino coffee using also the coffee from capsule machines or pods. I tried it and have to say I liked it just as much. Obviously, I’m biased, as you may have already guessed, I don’t even have a moka at home because I just don’t like it. Or rather, I don’t like moka coffee, I’ve gotten used to the taste of bar coffee (obviously if done well) or the capsule machine I have in the kitchen. So, whether you use the moka or the machine, keep in mind it takes three coffees for two people.
When the coffee maker has stopped bubbling and the coffee is finally ready, we can proceed. As mentioned before in the text of the step-by-step recipe, you will need medium-large ice cubes. I got mine at the beach near home, but you can easily make it at home by putting the ice bags or trays in the freezer the night before preparing the cold Leccese coffee.
Another aspect not to underestimate, since many of you advised me, is to keep the almond milk syrup in the refrigerator the day before to bring it to the right cold temperature.
As we can imagine, since coffee is a hot beverage that meets ice directly in the glass, the thermal shock is strong. In fact, this drink we’re about to prepare is listed among cold drinks to enjoy during summer days. A simple and quick way to refresh a bit, prolong the coffee ritual, and enjoy time with family or friends.
Let’s proceed then by taking the two glasses or two glass cups. Place four ice cubes in each glass to chill our coffee drink. With a spoon, pour the almond syrup, two tablespoons for each glass or cup. Finally, take the moka coffee and pour it gently into the glasses.
Hearing the ice cubes crack like small icebergs, but the most fascinating part for me of this recipe was not this step, but realizing that the coffee couldn’t penetrate the consistency of the almond syrup. In fact, by choosing a glass or cup, you’ll notice this visual effect immediately. We’ll have two layers: a whitish layer of syrup and a dark layer of coffee with the ice gems embedded in between.
The aroma that then spreads thanks to the thermal shock between hot and cold is intoxicating, the almonds blending with the coffee and the coffee with the sweetness of almonds. A fair exchange, a perfect marriage to enjoy cold! Sip after sip, you’ll appreciate this Leccese drink more and more.

Tips for Leccese Coffee Summer Drink Recipe
I recommend keeping the almond syrup in the fridge to ensure it’s well chilled before proceeding with the preparation of the Leccese Coffee or Salentino Coffee.
I also recommend using medium-sized ice, it will make the coffee drink we’re preparing even fresher and more refreshing.
