Ingredients for Lentils with Sausage

  • 7 oz Lentils
  • 2 Sausages
  • 1 Stock cube (vegetable)
  • 1 cup White wine
  • Half Onion (chopped)
  • to taste Extra virgin olive oil
  • to taste Salt
  • to taste Black pepper

Preparation of Lentils

  • Let’s start preparing the lentils with sausage two hours before cooking it. Take a bowl, add cold water and let the lentils soak for two hours. Once this time has passed, take a non-stick pot and pour the extra virgin olive oil until it completely covers the bottom. Sauté the onion and then add the sausage pieces, drain the lentils from the water and add them to the pot, add the glass of white wine and the stock cube, sprinkle with salt and pepper, cover with a lid and let cook on low heat for about 30 – 40 minutes.

  • Occasionally, with a wooden spoon, stir the ingredients to prevent them from sticking to the bottom. Serve the Lentils with Sausage hot, maybe accompanied by croutons or toasted bread. It’s a dish you can prepare as either an appetizer or a main course, or as tradition holds for New Year’s Eve, remember the legend that if you manage to count the lentils you eat, you will receive a lot of money? I prepare them throughout the winter because my partner really loves lentils prepared this way, and the sausage adds that extra touch, without taking anything away from the cotechino, of course.
