Ingredients for Meatballs in Tomato Sauce for two people:

  • 12.3 oz ground beef (mixed ground meat is also fine)
  • 1 glass tomato puree
  • as needed extra virgin olive oil
  • as needed salt
  • as needed black pepper
  • 0.5 oz white onion (finely chopped)
  • 1 egg
  • as needed breadcrumbs
  • as needed nutmeg
  • as needed cheese (grated, your choice)
  • 15 green olives (pitted)
  • 1/2 glass white wine

Preparation of Meatballs in Tomato Sauce:

  • The first thing to prepare for the meatballs in tomato sauce with olives is obviously the sauce. We need a basic tomato sauce, nothing too complicated or that requires long preparation times. So we take a large enough pot, pour some extra virgin olive oil to coat the bottom, and let the chopped onion fry.

    Then we pour the glass of tomato puree and add the green olives cut into small pieces. Let it all fry over low heat for a few minutes, then deglaze with the half glass of white wine, cover, and let the sauce cook.

  • Now let’s proceed with making the meatballs. In the bowl, start working the ground meat with your hands, adding the egg, breadcrumbs, a pinch of salt and pepper, a sprinkle of nutmeg, and the grated cheese. Mix the ingredients well and then proceed to form the meatballs, they should all be more or less similar and of medium size. This way we will also shorten the cooking times.

    Now take the non-stick pan, pour the tomato sauce into it, and add the meatballs. We will now add some salt and herbs to our tomato sauce. My father recommends finely chopped parsley, I really love the smell of oregano, otherwise, there is also the variant with fresh basil. You choose!

  • Now let the meatballs in tomato sauce cook for about 25 minutes, you will see the tomato sauce form the classic bubbles and the meatballs turn that bright red color.

    Serve the meatballs in tomato sauce nice and hot with plenty of sauce on the plate so you can do the classic final bread dip.

    The olives can obviously be either green or black, we don’t like the latter so we always use green ones.
